Nutritious and Tender Tofu Dry Curry
Create a Healthy and Flavorful Tofu Dry Curry at Home
Today, we’re making a special version of curry, one of my husband’s absolute favorites! It’s the ‘Tofu Dry Curry.’ Get ready for a delicious and healthy meal!
Ingredients- 1 block of firm tofu (approx. 300-350g)
- 1 onion (medium size)
- Mushrooms (e.g., king oyster, shiitake, or your preference) – a suitable amount
- 4 Tbsp curry powder (adjust to taste)
- 1 cup water (200ml)
- Salt to taste
Cooking Instructions
Step 1
First, prepare the onion and mushrooms which will add flavor to the dish. Finely chop the onion. Slice the mushrooms to a bite-sized piece or into strips, depending on your preference. Using different types of mushrooms can vary the aroma and texture, so choose your favorite.
Step 2
Without adding any oil to a heated pan, stir-fry the onion and mushrooms over medium-low heat until lightly cooked, being careful not to burn them. Stir-frying the vegetables first brings out their natural sweetness and enhances their subtle aroma, deepening the curry’s flavor.
Step 3
Once the vegetables start to look translucent, add 1 cup (200ml) of water and 4 Tbsp of curry powder. Whisk thoroughly to ensure there are no lumps. The saltiness and thickness can vary between curry powder brands, so adjust the amount based on the product you are using.
Step 4
For the tofu, lightly drain the block. Then, use the back of a knife or a fork to mash it. Mashing with the back of a knife makes it easier and leaves some texture, which enhances the overall mouthfeel. It’s best to mash it so that there are still small chunks remaining, rather than making it completely smooth.
Step 5
Add the mashed tofu to the curry being cooked and mix well. Stir and cook until the tofu has absorbed the delicious curry seasoning. Finally, season with salt according to your preference. Continue to stir and cook until the sauce thickens to your desired consistency, making sure it doesn’t stick to the bottom of the pan. Your delicious Tofu Dry Curry is now complete!
