  • 1 onion (approx. 150g)
  • 2 eggplants (approx. 200g)
  • 100g beef (stew meat)
  • Pinch of black pepper (5-6 shakes)
  • 500ml water (approx. 2.5 cups)
  • 1/3 packet curry powder (approx. 50g)
  • 3 Tbsp ketchup

First, prepare the vegetables that will add wonderful flavor to your eggplant curry. Dice the carrot, onion, and eggplant into roughly 1.5cm cubes. Cutting the vegetables into similar sizes ensures they cook evenly, leading to a more delicious curry.

Now, let’s start cooking the curry! Heat 1-2 tablespoons of cooking oil in a large pan over medium heat. Add the diced carrots and onions and sauté until they begin to turn translucent. Once the onions are softened, add the cubed eggplant and continue to cook until the vegetables are slightly tender. Add the beef (you can substitute with pork or chicken, or omit it) and cook until its surface turns opaque. Finish by sprinkling 5-6 shakes of black pepper to remove any gamey odors and enhance the aroma.

As the beef changes color and cooks, pour in 500ml of water (about 2.5 cups), ensuring it covers the vegetables and meat. Bring the mixture to a boil over high heat, then reduce to medium heat once it simmers.

Once the curry base is boiling vigorously, add 1/3 packet of curry powder (approximately 50g) directly into the pot. Stir well with a spoon to dissolve any lumps. (You can also mix the curry powder with a little water beforehand for a smoother consistency.) After the curry powder has mostly dissolved, stir in 3 tablespoons of ketchup. Ketchup adds a wonderful umami depth and a subtle sweetness, making the curry extra special. Mix everything together and let it simmer over low heat for about 5 more minutes until it thickens to your desired consistency.
