Main Ingredients

  • 2 chicken breasts (approx. 200-250g)
  • 20g dried seaweed
  • 1.5L water

Seasoning

  • 2 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • 2 Tbsp soup soy sauce (guk-ganjang)
  • 2 Tbsp anchovy sauce (myeolchi aekjeot)
  • Pinch of salt (to taste)

Cooking Instructions

First, soak the dried seaweed in cold water for about 10 minutes until it is fully rehydrated. Let the seaweed become tender.

Once rehydrated, drain the seaweed in a colander and rinse it thoroughly under running water by gently rubbing it. This removes excess salt and any impurities. Squeeze out as much water as possible by hand before setting aside.

In a pot, add 1.5L of fresh water and the prepared chicken breasts. Cover with a lid and boil over high heat for about 15 minutes until the chicken breasts are completely cooked through.

Remove the cooked chicken breasts from the pot. Rinse them briefly under cold running water to remove any impurities or gamey smell. Once slightly cooled, shred the chicken into bite-sized pieces along the grain.

In another pot or pan, heat 2 Tbsp of sesame oil over low heat. Add 1 Tbsp of minced garlic and sauté until fragrant. Be careful not to burn the garlic.

Once the garlic is fragrant, add the rehydrated seaweed and the shredded chicken breast. Stir-fry together lightly for about 1-2 minutes until the ingredients are well combined.

Now, pour the chicken broth (1.5L water) into the pot. Using the broth from cooking the chicken will add a deeper, richer flavor. If you prefer a clearer soup, you can strain the broth through a sieve before adding it.

Add 2 Tbsp of soup soy sauce and 2 Tbsp of anchovy sauce to season the seaweed soup. Taste and add more if needed. Once seasoned, bring the soup to a rolling boil over high heat.

When the soup comes to a boil, reduce the heat to medium. Leave the lid slightly ajar and simmer for about 15 minutes, allowing the flavors of the ingredients to meld into the broth.
