Ingredients

  • 1 cup soaked rice (approx. 150g)
  • 2/3 cup pine nuts (approx. 60g)
  • 4-5 cups water (approx. 800ml-1000ml)
  • Salt to taste

Cooking Instructions

First, wash 1 cup of rice thoroughly and soak it in water for about 30 minutes. Once soaked, place the rice in a blender along with 1 cup of water (the same amount as the rice). Blend until smooth. You can adjust the blending time based on your preference: blend less for a slightly textured porridge, or blend longer for a very smooth consistency.

Next, prepare 2/3 cup of pine nuts. Briefly rinse the pine nuts under cold water to remove any debris. (Soaking them in warm water can help them blend more smoothly.)

Add the prepared pine nuts to the blender with the soaked rice mixture.

Blend the rice and pine nuts together again. I personally prefer a porridge where the pine nuts retain some texture, so I blended the rice first, then added the pine nuts and blended only briefly. This method allows you to enjoy both the rich flavor and a pleasant chewiness from the pine nuts.

Now, pour the blended rice and pine nut mixture into a pot. Add 4-5 cups of water and bring to a simmer over medium heat. Since the rice can clump together initially, use a wooden spoon to stir and break apart any lumps as it heats up. Once the porridge begins to boil, reduce the heat to low. Let it simmer gently, stirring frequently to prevent it from sticking to the bottom, until the rice is fully cooked and the porridge has thickened. Achieving the right consistency is key. Once it’s cooked to your liking, season with salt to taste. Adjust the amount of salt according to your preference.

Finally, after seasoning, turn off the heat. Carefully ladle the warm pine nut porridge into a serving bowl. Your delicious and nutritious pine nut porridge is ready to be enjoyed!
