Nutritious and Simple Spinach Side Dish Recipe

Spinach, known as the ‘king of vegetables,’ is packed with folate and vitamins, making it incredibly beneficial for our health. Today, I’m sharing a recipe for a delicious and simple spinach side dish (namul) that anyone can easily make. It’s the perfect accompaniment to any meal!

Main Ingredients

  • 1 bunch fresh spinach (approx. 300g)

Seasoning Ingredients

  • 0.5 Tbsp minced garlic (approx. 5g)
  • 2 Tbsp soy sauce for soup (Guk-ganjang) (approx. 20ml)
  • 1 Tbsp sesame oil (approx. 10ml)
  • 1 Tbsp toasted sesame seeds or ground sesame seeds (approx. 10g)

Cooking Instructions

Spinach often has soil clinging to its roots, so wash it thoroughly under running water, rubbing gently to remove all dirt.

Trim off the roots about 0.5 cm from the bottom with scissors, then rinse again under clean water for a neater preparation. (If you’re uncomfortable using a knife, scissors are a safer and more convenient option!)

Successfully washing and trimming the spinach is more than half the battle when making spinach namul. It’s truly that easy!

Bring a pot of water to a boil, add 0.5 Tbsp of salt, and blanch the spinach for a very short time, about 30 seconds to 1 minute. Remove it as soon as the spinach turns a vibrant green.

Immediately rinse the blanched spinach under cold water to cool it down. This helps preserve its crisp texture and keeps the color bright and fresh.

Squeeze out as much water as possible from the cold-rinsed spinach with your hands. Excess water can prevent the seasonings from absorbing well and make the dish bland, so removing moisture is crucial.

Tip: Don’t throw away the water used for blanching the spinach! You can add a bit of soybean paste (doenjang) to it and boil it to make a delicious soybean paste soup. It’s a great way to use every bit! ^ ^

Cut the squeezed spinach in half crosswise into bite-sized pieces. This makes it easier to mix evenly with the seasonings.

In a bowl, combine the prepared spinach with all the seasoning ingredients (0.5 Tbsp minced garlic, 2 Tbsp soy sauce for soup, 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds or ground sesame seeds). Gently toss and mix until well combined. Your delicious spinach namul is ready! Measuring with a Korean rice spoon is convenient.
