Main Ingredients- 5 eggs
- 1/2 bunch spinach (approx. 150g)
- 2 stalks green onion (white part only, approx. 100g)

Cooking Instructions
Step 1
First, finely chop the green onions, focusing on the white parts. Wash the spinach thoroughly and cut it into roughly 5 equal lengths (about 5cm each).

In a bowl, crack the 5 eggs. Add 5 pinches of salt and 2 pinches of sugar. Whisk everything together until well combined. Adding sugar helps to neutralize any eggy odor and enhances the flavor.
Step 3
Heat a wok or frying pan over medium-high heat and add 1/5 cup of cooking oil. Once the oil is hot, pour in the whisked eggs to make scrambled eggs. Cook until just set, then gently break them into bite-sized pieces. Remove the scrambled eggs from the pan and set aside.

Using the same pan with the remaining oil, add the chopped green onions. Stir-fry over medium-low heat until the onions are fragrant and lightly golden brown, creating aromatic scallion oil.

Add the prepared spinach to the pan with the scallion oil. Sprinkle with an additional pinch of salt. Stir-fry gently just until the spinach wilts. Be careful not to overcook, as it can become mushy.
