- 1 potato
- 100g aged kimchi
- 1 king oyster mushroom
- 1/2 zucchini
- 1 green chili pepper
- 1 red chili pepper
- 1 tsp maple syrup

Step 1
First, prepare the mung beans. Soak the mung beans thoroughly for about 3 hours. After soaking, gently rub the mung beans between your hands to remove the skins. Discard the skins that float to the surface by carefully pouring out the water. While some pre-hulled mung beans are available, if you want to ensure extra cleanliness and safety, you can briefly blanch them in boiling water to remove the skins before proceeding.
Step 2
Add the peeled and chopped potato to the soaked mung beans. Add a little water to help them blend smoothly, and then process in a blender or food processor until finely ground. It’s important to achieve a smooth batter without any lumps.

Prepare the other ingredients. Rinse the aged kimchi, squeeze out excess water, and chop it finely. Finely dice the king oyster mushroom, zucchini, green chili pepper, and red chili pepper. Dicing them small is recommended, as large pieces may take longer to cook or cause the pancakes to tear.
