Making Delicious and Healthy Yam Rice with Added Yam
Yam, often nicknamed ‘the eel of the mountains,’ is a precious ingredient that nourishes the body, as described in the Donguibogam: ‘Sweet in taste, warm and neutral in energy, and non-toxic.’ It aids in stomach health, acts as a tonic, and even helps with skin elasticity and strengthening joints! Today, we’ll be making yam rice, an adaptation of Chef Sun Mi-ja’s recipe, packed with both flavor and nutrition. It’s easily prepared in a rice cooker, making it a perfect option for a busy breakfast or a hearty meal.
Yam Rice Ingredients- 1.5 cups non-glutinous rice (regular rice)
- 0.5 cup glutinous rice (sticky rice)
- 100g yam
- 1/3 tsp black sesame seeds
- A pinch of jujubes (for garnish)
- A pinch of pumpkin seeds (for garnish)
- A pinch of black sesame seeds (for garnish)
- 320g water
Yam Rice Seasoning Ingredients- 1 Tbsp minced green chili
- A pinch of minced red chili
- 0.5 Tbsp fish sauce
- 0.5 Tbsp soy sauce
- A pinch of fine chili powder
- 1 tsp sesame oil
- 1 tsp toasted sesame seeds
- 1 Tbsp minced green chili
- A pinch of minced red chili
- 0.5 Tbsp fish sauce
- 0.5 Tbsp soy sauce
- A pinch of fine chili powder
- 1 tsp sesame oil
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the rice. Non-glutinous rice is regular rice, and glutinous rice is sticky rice used for dishes like yakbap or rice cakes. Prepare 1.5 cups of non-glutinous rice and 0.5 cup of glutinous rice.
Step 2
Rinse the prepared non-glutinous and glutinous rice thoroughly in clean water until the water runs clear. Then, soak them in water for about 30 minutes. After soaking, drain the rice in a sieve.
Step 3
Wash the yam clean, then wear vinyl gloves and peel it using a vegetable peeler. Touching yam with bare hands can cause itching or allergic reactions, so be cautious. Dice the peeled yam into bite-sized cubes (about 1 cm). Soak the diced yam in a vinegar-water solution (1 cup water with 1 Tbsp vinegar) for 10 minutes. This helps prevent browning and also sterilizes the yam.
Step 4
Place the drained rice in the rice cooker, and then spread the diced yam evenly on top.
Step 5
Add water for 2 servings. Since the yam releases moisture while cooking, use slightly less water than usual to avoid the rice becoming too mushy.
Step 6
Let’s make a delicious seasoning to go with the yam rice. In a bowl, combine 1 Tbsp minced green chili, a pinch of minced red chili, 0.5 Tbsp fish sauce, 0.5 Tbsp soy sauce, a pinch of fine chili powder, 1 tsp sesame oil, and 1 tsp toasted sesame seeds. Mix well.
Step 7
Prepare the garnishes for the top of the yam rice. For the jujubes, remove the seeds, roll them up, and slice them into about 0.5 cm thick slices to make ‘jujube flowers,’ or simply slice them lengthwise. Also, prepare the pumpkin seeds.
Step 8
Close the rice cooker lid and cook the rice using the standard white rice setting. Once the cooking cycle is complete, your delicious yam rice will be ready.
Step 9
Once the rice is cooked, sprinkle the prepared jujube flowers, pumpkin seeds, and black sesame seeds over the yam rice for a beautiful presentation.
