Using the water from boiling the bean sprouts to cook the rice adds a deeper, more delicious flavor. Bean Sprout Rice Ingredients

  • 1 bag bean sprouts (approx. 300g)
  • 1/2 carrot (approx. 50g)
  • 4 dried shiitake mushrooms (or 2 fresh shiitake mushrooms)
  • 1 Tbsp perilla oil
  • 2 Tbsp soy sauce for soup (guk-ganjang)

Fragrant Shelled Wild Ginger Sauce

  • 1 pack shelled wild ginger (dallae) (approx. 50g)
  • 5 Tbsp regular soy sauce (ganjang)
  • 2 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp oligodang (or sugar)
  • 0.5 Tbsp minced garlic
  • A pinch of sesame seeds (1/2 Tbsp)
  • 1 Tbsp sesame oil
  • 1/2 red chili pepper (optional)
  • 1/2 green chili pepper (optional)

Cooking Instructions

Step 1

First, wash the bean sprouts thoroughly under running water. Place the bean sprouts in boiling water and blanch for about 2-3 minutes until they are still crisp. Immediately rinse the blanched bean sprouts in cold water and drain well. Do not discard the water used for boiling the bean sprouts; use it as the water for cooking the rice, as it will add a refreshing taste and make the rice more delicious.

Rinse the rice thoroughly and let it drain in a sieve. (For 2 cups of rice)

Add the drained rice to your rice cooker. Pour in the reserved bean sprout boiling water to measure the correct amount of cooking water. It’s best to use slightly less water than you normally would. Generally, aim for the water level to be about half the height of your index finger’s middle segment (approximately 1cm) above the rice.

Arrange the blanched bean sprouts over the soaked rice. Add thinly sliced shiitake mushrooms (rehydrate dried ones first) and thinly sliced carrots attractively on top. Drizzle with 1 Tbsp of perilla oil and 2 Tbsp of soy sauce for soup. Gently mix these ingredients to prevent the rice from sticking, then select the ‘cook’ function on your rice cooker to start cooking the rice. (Use ‘Quick Cook’ or ‘Normal Cook’ mode).

While the rice is cooking and steaming, let’s prepare the delicious dallae sauce. This is the key ingredient that will enhance the flavor of your bean sprout rice!

Clean and trim the dallae, then chop it into 2-3cm lengths. In a bowl, combine the chopped dallae with 5 Tbsp of regular soy sauce, 2 Tbsp of red pepper flakes, 1 Tbsp of oligodang, 0.5 Tbsp of minced garlic, a pinch of sesame seeds, and 1 Tbsp of sesame oil. Optionally, you can add finely chopped red and green chili peppers for extra spiciness, according to your preference. Mix all the ingredients well. Taste the sauce and adjust the sweetness, saltiness, and spiciness to your liking.

For added health benefits, consider mixing in brown rice or barley that has been milled for 5-6 minutes. (Optional)

Your healthy and delicious vegetable bean sprout rice is ready! Once you scoop out the rice from the rice cooker, you’ll discover the wonderful combination of bean sprouts, mushrooms, and carrots.

Serve a generous portion of the rice in a bowl. Top it with plenty of the crisp bean sprouts, and then add a liberal amount of the homemade dallae sauce. Mix everything together and enjoy! Tip: For an incredibly rich and delicious flavor, try adding a small teaspoon of butter when mixing the rice and sauce. It’s truly heavenly! ^^
