Ingredients

  • 4 Eggs
  • 1/2 block Tofu (approx. 150g)
  • 1 handful Cocktail Shrimp (approx. 50g)
  • 1/4 Onion
  • 1/3 Green Onion
  • A little Carrot (approx. 20g)
  • 1 tsp Salt
  • 1 Tbsp Cooking Wine (Mirin)

First, let’s prepare the vegetables. Peel and thoroughly wash the onion, then finely chop it into small pieces about 0.5 cm in size. Wash the green onion, focusing on the white parts, and finely chop it in the same way. Chopping them small ensures a pleasant texture and even cooking within the steamed egg.

Peel the carrot and mince it very finely. If using cocktail shrimp, remove the shells, rinse them under running water, and pat them dry with a paper towel. Then, finely mince the shrimp meat. For an extra flavor boost, you can substitute the minced shrimp with salted pollock roe (myeongran) or add a small amount of flying fish roe for a delightful ‘pop’ in every bite.

Drain the tofu lightly by placing it in a sieve. Then, mash the tofu using your hands or a fork until it’s soft and crumbly. Season the mashed tofu with a tiny amount of soy sauce and 1 tablespoon of cooking wine (mirin). You can also season with salt instead of soy sauce.

Crack 4 fresh eggs into a bowl. Add 1 teaspoon of salt. Whisk the eggs gently with a whisk until the yolks and whites are completely combined and smooth. Avoid over-whisking; the key to a tender steamed egg is to break down the egg white strands and achieve a uniform, silky texture.

To prevent sticking, lightly grease the bottom of a non-stick pot (or an oven-safe dish) with 1 tablespoon of sesame oil and 1 tablespoon of perilla oil. This step ensures the steamed egg won’t burn or stick, while also adding a wonderful nutty aroma. A clay pot or a heat-resistant glass dish can also be used.

Add the mashed tofu to the pot, followed by the chopped onion, green onion, carrot, and minced shrimp. Sauté over medium-low heat until the vegetables begin to soften and release their moisture. Then, add the seasoned mashed tofu and stir-fry together. This process enhances the natural sweetness of the vegetables and enriches the overall flavor of the steamed egg. Think of it as cooking the vegetables before adding them to the egg mixture.

Once the vegetables and tofu are sautéed, pour in half of the prepared egg mixture. Stir gently to combine the egg with the sautéed ingredients. Then, pour in the remaining egg mixture and mix everything together smoothly. Keep the heat on medium-low and cover the pot, allowing it to cook slowly for about 10 minutes. Using high heat can burn the surface before the inside is cooked.

As the steamed egg begins to set, gently stir from the bottom of the pot with a chopstick or spoon. This technique ensures even cooking and a creamier texture. To check for doneness, insert a chopstick into the center; if it comes out clean, the steamed egg is ready. Turn off the heat, cover the pot again, and let it rest for 1-2 minutes to allow it to steam through. Your delicious, tender vegetable tofu steamed egg is now ready to be enjoyed! It’s best served warm.
