Main Ingredients

  • 4 eggs
  • 1/8 onion (finely diced)
  • 2cm piece of carrot (finely diced)
  • 3cm piece of zucchini (finely diced)

Broth and Seasoning

  • 1 sheet of dried kelp (dashima)
  • A small amount of dried shrimp
  • 2 cups of water (approx. 300ml, using a paper cup)
  • 1/2 tsp salt (or 1 tsp salted shrimp paste)

Cooking Instructions

Step 1

First, let’s make the broth, which is the base for a delicious steamed egg. Pour 2 paper cups of water (about 300ml) into a pot, add 1 sheet of dried kelp and a small amount of dried shrimp. Simmer for about 5 minutes to extract the flavor, then remove the kelp and dried shrimp. (If you’re short on time or prefer a simpler method, you can use plain water.)

While the broth is simmering, finely dice the onion, carrot, and zucchini into small, bite-sized cubes, suitable even for children. If the broth starts boiling while you’re chopping the vegetables, you can reduce the heat or temporarily turn it off to prevent burning.

Once the broth is ready and the vegetables are chopped, carefully remove the kelp and dried shrimp from the broth. Now, everything is prepared to make your delicious steamed egg!

In a large bowl, crack the 4 eggs. Add all the finely diced onion, carrot, and zucchini. Season with 1/2 tsp of salt or 1 tsp of salted shrimp paste for an extra layer of umami. Pour in the prepared broth (or water) and gently whisk everything together with a long wooden chopstick or fork until well combined and no lumps remain.

Place the bowl or a small pot containing the egg mixture over the heat source. Cover with a lid and cook over very low heat for about 2-3 minutes. This will result in a moist and fluffy steamed egg with a little bit of broth remaining. It’s a perfect dish for breakfast or as a side dish!
