Main Ingredients- Prepared duck meat 0.8kg
- King oyster mushrooms 2
- Green bell peppers 2
- Yellow bell pepper 1
- Scallion 1/2 stalk
- Red chili peppers 1-2
Seasoning Ingredients- Gochujang (Korean chili paste) 3 Tbsp
- Soy sauce 3 Tbsp
- Minced garlic 2 Tbsp
- Gochugaru (Korean chili flakes) 3 Tbsp
- Sugar 3 Tbsp
- Cooking wine (Mirin) 3 Tbsp
- Ginger cube 2 (or 1 tsp minced ginger)
- Black pepper 1/2 tsp
- Sesame oil 2 Tbsp (for marinating)
- Sesame oil 1 Tbsp (for finishing)
- Sesame seeds 1 Tbsp
- Gochujang (Korean chili paste) 3 Tbsp
- Soy sauce 3 Tbsp
- Minced garlic 2 Tbsp
- Gochugaru (Korean chili flakes) 3 Tbsp

Cooking Instructions
Step 1
First, prepare the duck meat and the vegetables for stir-frying. Rinse the duck meat lightly under running water and pat it dry thoroughly with paper towels. Slice the king oyster mushrooms to about 0.5cm thickness. Remove the seeds from the green and yellow bell peppers and cut them into thick strips. Slice the scallions diagonally, and the red chili peppers diagonally after removing the seeds, for added color.

Now, let’s make the marinade for the duck. In a bowl, combine 3 Tbsp of soy sauce, 3 Tbsp of cooking wine (mirin), and 2 Tbsp of minced garlic.
Step 3
Add 2 ginger cubes (or 1 tsp minced ginger). Ginger is key to neutralizing any gamey smell from the duck.

Add 1/2 tsp of black pepper.

Add 2 Tbsp of sesame oil for a rich, nutty flavor. This sesame oil is used for marinating the duck.

Add 3 Tbsp of gochujang (Korean chili paste) to create the spicy base of the sauce.

Add 3 Tbsp of sugar to balance the spicy flavor with a touch of sweetness.

Whisk all the seasoning ingredients together with a spoon or whisk until well combined and smooth.

Wipe the duck meat, which has had its excess moisture removed, once more with a paper towel to ensure it’s free of any impurities.

Add the duck meat to the prepared marinade.

Gently mix the duck meat and marinade with your hands until evenly coated. Let it marinate for about 10 minutes to allow the flavors to meld.

Slice the vegetables for stir-frying into bite-sized pieces (king oyster mushrooms, green bell peppers, yellow bell pepper, scallions).

Slice the red chili peppers to add a vibrant touch and a hint of heat.
Step 14
Heat a pan over medium-high heat and add the marinated duck meat. Stir-fry until the duck is almost cooked through. Once almost done, cut the duck into bite-sized pieces if they are large. Stir-frying it first helps to remove any gamey odor and enhance its flavor.

Add the sliced king oyster mushrooms and stir-fry them with the duck. The moisture released from the mushrooms will help keep the duck tender.

Add the sliced onion and stir-fry. Cook until the onions become translucent.

Add the diagonally sliced scallions and stir-fry until they are slightly wilted. This adds a wonderful aroma.

Add the yellow and green bell peppers and stir-fry quickly over high heat to maintain their crisp texture. Be careful not to overcook them, as they can become mushy.

Finally, drizzle in 1 Tbsp of sesame oil for an extra layer of nutty flavor.

Add the sliced red chili peppers and toss briefly to incorporate their heat and color. The red chilies add visual appeal and a mild spicy kick.

Once all the ingredients are well combined, turn off the heat and transfer the stir-fry to a serving dish.
