Salt-cured seaweed is surprisingly affordable, has a long shelf life, and offers a unique flavor that makes it a delightful treat any time of year, whether it’s hot summer or cold winter. Enjoy this versatile dish!
Ingredients- Salt-cured seaweed (for wraps)
- Warm cooked rice
- Red and yellow bell peppers
- Pickled onions or pickled radish (danmuji)
Cooking Instructions
Step 1
The salt-cured seaweed is covered in salt. Let’s start by rinsing it thoroughly under running water several times to remove the initial saltiness. This step is crucial for a balanced flavor.
Step 2
Place the rinsed seaweed in a bowl and add enough fresh water to cover it completely. Let it soak for about 20 minutes to remove the secondary saltiness. Be careful not to soak it for too long, as this can cause nutrients to leach out. Aim for just the right amount of soaking time.
Step 3
Next, blanch the seaweed in boiling water for about 3 minutes. Once blanched, immediately rinse it under cold water to cool it down. Drain the seaweed thoroughly in a colander, ensuring all excess water is removed. Now, your seaweed is ready for making the delicious seaweed rolls!
Step 4
We’re using pickled onions for a burst of tangy flavor. If you have homemade pickled onions, they work wonderfully instead of store-bought pickled radish (danmuji). Any other sour or tangy pickles, like pickled radishes or pickled garlic stems, would also be a great addition.
Step 5
Squeeze out any excess liquid from the pickled onions or danmuji, and then thinly julienne them. Similarly, thinly julienne the red and yellow bell peppers after removing the seeds. Feel free to add other vegetables you enjoy for extra texture and flavor.
Step 6
You can use the warm rice as is, or for added flavor and aroma, mix it with a little sesame oil and toasted sesame seeds. Gently mix the rice to ensure it’s evenly seasoned without being mushy.
Step 7
Cut the prepared seaweed sheets into manageable sizes, large enough to hold the rice. Spread a thin layer of seasoned rice evenly over each seaweed piece. Top the rice with the julienned pickled onions and bell peppers. Then, carefully roll up the seaweed from one end to the other, ensuring a tight roll so the filling stays put.
Step 8
Here are your homemade seaweed rolls! The chewy texture of the seaweed combined with the rice, crisp vegetables, and tangy pickles creates a truly special and satisfying dish. This is such a unique and delightful treat that you’ll find yourself making it again and again. Enjoy!
