How to Make Healthy Cabbage Rice with Reduced Carbohydrates
Enjoy a healthy meal with this light and delicious Cabbage Rice! We’ve added shredded cabbage to the rice for a tender texture and rich flavor. This recipe also includes a flavorful soy sauce dressing to serve alongside. It’s easy to make using a rice cooker or a pot.
Main Ingredients- 1/4 head of cabbage, washed and prepared
- 2 cups of rice (approx. 360g)
- 1.5 cups of water (approx. 270ml)
Flavorful Soy Sauce Dressing- 5 Tbsp soy sauce (or brewed soy sauce)
- 2 Tbsp corn syrup or malt syrup
- 1 Tbsp fine red chili powder
- 2 Tbsp perilla oil (or sesame oil)
- A small amount of fresh chives, finely chopped
- 5 Tbsp soy sauce (or brewed soy sauce)

Cooking Instructions
Step 1
First, rinse the 2 cups of rice under running water two to three times until clean. Drain the rinsed rice in a sieve and place it in a bowl. Let the rice soak for 30 minutes. This soaking process helps make the rice fluffy and delicious.
Step 2
Wash the fresh 1/4 head of cabbage, removing any tough outer leaves. Shred the cabbage thinly into bite-sized pieces. Thinly shredded cabbage will cook down to a soft texture, blending beautifully with the rice.
Step 3
To enhance the fresh and crisp texture of the shredded cabbage, soak it in water with 1 Tbsp of vinegar for about 5 minutes. After soaking, rinse the cabbage thoroughly under running water to remove any residual vinegar. Gently pat dry. This step helps remove any unpleasant odors from the cabbage and keeps it fresh.
Step 4
Drain the soaked rice completely in a sieve. Now, place the soaked rice into a pot. Spread the shredded cabbage evenly over the top of the rice. Layering the cabbage on top allows its moisture to steam into the rice, resulting in moist and tender cooked grains.
Step 5
Add 1.5 cups of water to the pot. Place the pot over high heat. Once the water starts to boil, immediately reduce the heat to medium-low. Cover the pot tightly and let it simmer for about 12 minutes. Proper heat control is crucial; remember to lower the heat once it boils.
Step 6
After simmering for 12 minutes, turn off the heat completely. Keep the lid on and let the rice steam for 10 minutes. Once done, open the lid and gently fluff the rice and cabbage with a spatula. Be careful not to mix too vigorously, as this can mash the rice grains. Your delicious Cabbage Rice is now ready!

Let’s make a flavorful soy sauce dressing to go with the Cabbage Rice! In a small bowl, combine 5 Tbsp soy sauce, 2 Tbsp corn syrup or malt syrup, 1 Tbsp fine red chili powder, and 2 Tbsp fragrant perilla oil (or sesame oil). Mix well. Finally, add a small amount of finely chopped fresh chives for extra aroma. This dressing can be mixed into the rice or used as a dipping sauce for an even more delicious experience.
