Cooking Instructions
Step 1
Prepare the dried radish greens by measuring them using the empty Saengseon Mackerel can. Aim to fill the can completely; this helps gauge the right amount for the stew.
Step 2
Cut the prepared dried radish greens into bite-sized pieces. Avoid making them too long, as this can make them difficult to handle or eat.
Step 3
Do not discard the liquid from the canned Saengseon Mackerel! This liquid is a key ingredient that adds depth of flavor to the braising sauce. We will use all of it.
Step 4
In a large bowl, combine the Saengseon Mackerel liquid, Doenjang, Gochujang, Jin-ganjang, minced garlic, Gochugaru, sugar, and grated ginger. Mix thoroughly until the sauce is well combined and smooth.
Step 5
Now, in a pot suitable for braising, place the cut dried radish greens at the bottom. The greens will absorb the sauce as they cook, becoming tender and complementing the mackerel.
Step 6
Arrange the canned Saengseon Mackerel pieces on top of the layer of radish greens. This helps to mellow the fishiness and infuse it with the flavors of the sauce.
Step 7
Pour the prepared braising sauce evenly over the mackerel and radish greens. Ensure the sauce coats all the ingredients well.
Step 8
Finally, using the empty Saengseon Mackerel can as a measure, add 1 can of water to the pot. Adding the right amount of water is crucial to prevent the stew from drying out too quickly.
Step 9
Place the pot over high heat and wait for the liquid to come to a boil. Initially, high heat helps to bring everything up to temperature quickly.
Step 10
Once the liquid begins to bubble vigorously, reduce the heat to low. Simmering on low heat allows the ingredients to cook through without burning and ensures the flavors meld beautifully.
Step 11
Cover the pot and let it simmer gently over low heat for 15 to 20 minutes. If the sauce seems to be reducing too much during cooking, you can add a little more water.
Step 12
Voila! Your Saengseon Mackerel with Dried Radish Greens is ready. It’s incredibly flavorful, with no fishy odor, and the flavors are perfectly balanced. It looks absolutely delicious!
Step 13
The tender dried radish greens, infused with the rich sauce, are incredibly satisfying and make for a perfect accompaniment to rice. Serving it over warm rice is pure bliss.
Step 14
Enjoy making and eating this delicious dish! ♡
