Egg Potato Salad Dressing (Measurements: Tablespoons)

  • 2 Tbsp allulose syrup
  • Pinch of salt
  • Pinch of black pepper
  • Pinch of dried parsley flakes

Fresh eggs will add a lovely creaminess to your salad. Take the eggs out of the refrigerator and let them sit at room temperature for about 30 minutes to remove the chill. Pour enough water into a pot to cover the eggs completely and bring it to a boil over high heat. Once the water is boiling, carefully add the eggs and boil for about 12 minutes for hard-boiled eggs. Immediately transfer the boiled eggs to cold water to cool them down, then peel off the shells.

Mashing while they’re hot makes for a creamier potato salad! While the boiled red potatoes are still hot, use a fork or a potato masher to mash them smoothly until there are no lumps.

It’s time to prepare the eggs to complement the potato texture. Carefully separate the egg whites from the yolks. Finely chop the egg whites using a fork or a knife.

Let’s create a fantastic combination of potato and egg! Add the egg yolks to the mashed red potatoes and mix well. Next, add the finely chopped egg whites, along with 2 tablespoons of unsweetened plain yogurt and 2 tablespoons of allulose syrup.
