Ingredients- 2 Eggplants
- 1/4 Cabbage
- 1/2 Carrot
- 1/2 Bell Pepper (yellow)
- 1/2 Onion
- Mustard sauce, to taste
Cooking Instructions
Step 1
First, wash the 2 eggplants thoroughly. Slice them lengthwise into approximately 0.5cm thick pieces. Heat a frying pan over medium heat, add a little oil, and lightly cook the eggplant slices on both sides until they are tender but still hold their shape. Be careful not to overcook them until mushy; a light sear is key.
Step 2
Arrange the lightly cooked eggplant slices neatly on a cutting board or a large plate. These will form the outer layer of your rolls.

Finely shred 1/4 cabbage. Shredding it very thinly will improve the texture when rolled and make it easier to roll up neatly.

Peel and wash 1/2 carrot, then julienne it into thin strips, similar in thickness to the cabbage. Cut them to a manageable length and arrange them on top of the eggplant slices.

Remove the seeds from 1/2 yellow bell pepper and julienne it thinly. The bright color adds beautiful visual appeal to the rolls. Arrange the bell pepper strips on the eggplant alongside the carrots.

Julienne 1/2 onion. If you find raw onion too pungent, you can soak the julienned onion in cold water for a few minutes and then drain it well before use.

Now, carefully place the thinly sliced cabbage, carrot, bell pepper, and onion onto each eggplant slice, arranging them attractively. Avoid overfilling, as this can make it difficult to roll. Starting from one end, tightly roll up the eggplant with the vegetables inside. Gently press the end to secure the roll.

Once rolled, stand the eggplant vegetable rolls upright to keep them from unrolling. You can carefully squeeze a little mustard sauce inside each roll or serve it on the side for dipping. If mustard sauce isn’t available, a mayonnaise or soy-based sauce would also be delicious.
