Ingredients- 1 tsp minced garlic
- 1 handful anchovies (small, dried for stir-frying)
- 3 Tbsp seaweed flakes (kim-garu)
- 1/2 handful spinach (approx. 50g)
- 1 tsp toasted sesame seeds
- 2 bowls cooked rice (warm)
Anchovy Stir-fry Seasoning- 1 tsp sugar
- 1 Tbsp cooking wine (mirin)
- 2 Tbsp soy sauce

Cooking Instructions
Step 1
First, prepare the spinach. Blanch the spinach in boiling water for about 1 minute until just wilted. Be careful not to overcook it, as it can become mushy. Immediately rinse the blanched spinach under cold water, squeeze out excess moisture thoroughly, and chop it into small pieces, about 1 cm in length.
Step 2
Next, we’ll make the flavorful anchovy stir-fry. Heat a lightly oiled pan over low heat. Add the minced garlic and sauté gently until fragrant. This slow cooking process enhances the garlic aroma without burning it. Keep the heat low to prevent the garlic from scorching.
Step 3
Once the garlic is fragrant, add the anchovies to the pan and stir-fry them with the garlic. Sautéing the anchovies until they become crispy helps to reduce any fishy smell and brings out their nutty flavor.
Step 4
When the anchovies are nicely stir-fried, add the seasoning ingredients for the anchovy stir-fry: 2 Tbsp soy sauce, 1 Tbsp cooking wine (mirin), and 1 tsp sugar. Continue to stir-fry, allowing the sauce to reduce and coat the anchovies evenly. Be mindful of the heat to prevent the sauce from burning.
Step 5
Now, it’s time to combine everything into the rice. In a bowl, combine 2 bowls of warm cooked rice with the prepared anchovy stir-fry, chopped spinach, seaweed flakes, and toasted sesame seeds. Add the rice seasoning ingredients: 1 Tbsp sesame oil, a pinch of salt, and a pinch of black pepper. Gently mix all the ingredients together using a spatula or spoon until well combined. Avoid mashing the ingredients; mix gently for a better texture.
Step 6
Finally, shape the rice mixture into bite-sized balls. Wearing disposable gloves, take portions of the rice mixture and gently form them into round shapes.
