  • 1 lb (500g) zucchini or summer squash, about 1 medium
  • 1/4 medium onion

Cooking Instructions

Step 1

First, wash the zucchini (or summer squash) thoroughly and pat it dry. Slice it into thick half-moons or sticks, about 0.3-0.4 inches (0.7-1 cm) thick. Slicing them too thinly might result in a mushy texture after cooking, so aim for a nice thickness.

Step 2

Peel the 1/4 onion and slice it into fine julienne strips. Thinly sliced onions will blend smoothly with the zucchini for a pleasant texture.

Step 3

Pour the 2 Tbsp of cooking oil evenly into the inner pot of your rice cooker. Add all the sliced onions and 1 tsp of minced garlic (or 1 tsp of garlic powder). This step adds a fragrant garlic aroma to enhance the zucchini’s flavor.

Step 4

Add all the prepared zucchini slices to the rice cooker. Next, add 2 tsp of salted fermented shrimp and a pinch of red pepper flakes. To ensure the seasoning is evenly distributed, it’s best to mix everything thoroughly with your hands. (Using disposable gloves makes this process easier.)

Step 5

Cook using your rice cooker’s ‘Cook’ or ‘Reheat’ function for 9 minutes. Note that rice cooker functions can vary by model. If you have a ‘Reheat’ option, set it for 9 minutes. If not, choose the closest available setting and adjust the time as needed to ensure the zucchini is cooked to your desired tenderness.

Step 6

Once cooking is complete, carefully remove the inner pot from the rice cooker. While it’s still hot, drizzle in 1 tsp of sesame oil and mix well. The nutty aroma of sesame oil will add a wonderful depth of flavor to your stir-fry. Finally, sprinkle with toasted sesame seeds for a delicious finish!
