Whip up a hearty and flavorful Gang-Doenjang stew using vegetables you already have in your fridge. It’s delicious served with fresh greens for wraps, or simply mixed into a bowl of warm rice for a satisfying meal. This is a truly effortless recipe for a rice-loving crowd!

Main Ingredients

  • 1/2 block Tofu (approx. 150g)
  • 1/3 Zucchini (approx. 50g)
  • 1/2 Scallion (white part mainly, approx. 50g)
  • 1 Potato (medium size, approx. 100g)
  • 1/2 Onion (medium size, approx. 50g)
  • 1 Red chili pepper
  • 1 Green chili pepper (add more for extra spice)

Seasoning Ingredients

  • 3 Tbsp Doenjang (Korean soybean paste, approx. 45g)
  • 1/2 Tbsp Gochujang (Korean chili paste, approx. 7g)
  • 1 Tbsp Gochugaru (Korean chili flakes, approx. 7g)
  • 1/2 Tbsp Minced garlic (approx. 5g)
  • 400ml Water or Anchovy-Dashi Broth (approx. 2 cups)

Cooking Instructions

Step 1

First, pour 400ml of water or anchovy-dashi broth into a pot. Dissolve 3 tablespoons of doenjang and 1/2 tablespoon of gochujang into the liquid. The deep flavor of Gang-Doenjang starts with the harmony of broth and doenjang. Bring it to a boil over medium heat, then reduce to low.

Dice all vegetables and tofu into small cubes, about 0.7cm to 1cm in size. Since potatoes are firm, add them to the pot first and let them cook. Once the potatoes begin to soften, add the onion and zucchini and continue to simmer. Finally, gently add the tofu, being careful not to break it apart, and cook.

Check if the potatoes are tender. Then, add the chopped scallions, red chili pepper, and green chili pepper. Finish by stirring in 1/2 tablespoon of minced garlic and 1 tablespoon of gochugaru. Let it simmer briefly for all the ingredients to meld together beautifully. Your delicious Tofu Gang-Doenjang is ready!
