Spinach Frittata: A Hearty Breakfast Treat with My Daughter
Introducing our ‘Spinach Frittata,’ a delightful combination of sweet spinach, the complete food that is eggs, and fiber-rich tomatoes. My daughter, who’s dieting for her school trip next month, absolutely loves this! She says it’s satisfying and keeps her full, making it perfect for breakfast. While the men in our house aren’t as keen, this Italian-style omelet is a favorite among the women. Let’s make a simple yet elegant Italian omelet.
Main Ingredients- 4 large eggs
- 1 ripe tomato
- 1/2 bunch fresh spinach
- 1 slice processed cheese (e.g., cheddar)
- A pinch of dried cranberries
- A sprinkle of grated Parmesan cheese
- Pinch of salt
- Pinch of black pepper
- 1/3 cup milk
- 1/2 medium onion
- 1 tablespoon minced garlic
Cooking Instructions
Step 1
First, wash the spinach thoroughly, pat it dry, and roughly chop it. Dice the tomato into bite-sized pieces, and finely mince the onion.

In a bowl, crack the 4 eggs. Add 1/3 cup of milk and whisk gently until well combined. Make sure to break up the egg yolks and whites for a uniform texture. Avoid over-whisking.
Step 3
Heat a lightly oiled pan over medium heat. Add the minced garlic and minced onion, and sauté until fragrant. Once the onions become translucent, add the chopped tomatoes and spinach. Season with a pinch of salt and pepper. Stir-fry quickly over medium-high heat for just 1-2 minutes, until the vegetables are vibrant but still slightly crisp. Overcooking will make them lose their texture.
Step 4
Arrange the sautéed vegetables evenly in an oven-safe dish or skillet. Pour the whisked egg mixture over the vegetables, ensuring they are well covered. Scatter the dried cranberries over the top for a touch of sweetness and color.

If the initial dish seems a bit small, transfer the mixture to a larger oven-safe pan or baking dish. Place it in a preheated oven at 180°C (350°F) for about 10 minutes. Alternatively, you can cook it in the microwave on high power for about 5-7 minutes, depending on your microwave’s wattage.

After the initial 10 minutes of baking (or after checking the microwave), take the frittata out. Tear the slice of cheese into pieces and distribute them evenly over the top. Return it to the oven and bake for another 15 minutes, or until the cheese is melted and golden brown, and the frittata is set.

Once fully cooked, remove the frittata from the oven. Finish by sprinkling grated Parmesan cheese over the top for an extra layer of savory flavor. For a touch of freshness and color, you can also add a little chopped parsley.
