Nutrient-Rich & Super Easy Sardine Kimchi Stew Recipe
Whip up ‘Sardine Kimchi Stew’ in a Flash with Leftover Sardines & Kimchi!
Transform those leftover sardines in your fridge into a hearty and delicious kimchi stew for dinner tonight! This incredibly simple recipe delivers amazing flavor with minimal effort. Feel free to use any kind of blue-backed fish, so let’s get started!
Main Ingredients- 5 sardines (or 1 can of sardines/saury/mackerel)
- 1/4 head of well-fermented napa cabbage kimchi
- 1/2 onion
- 1 handful of green onions
- 3 chili peppers (e.g., Korean green chili peppers)
Seasoning Ingredients- 1 Tbsp doenjang (fermented soybean paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 4 Tbsp cooking wine (Mirin or Cheongju)
- 2 Tbsp oligosaccharide (or corn syrup)
- 3 Tbsp sesame oil
- 1 Tbsp doenjang (fermented soybean paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 4 Tbsp cooking wine (Mirin or Cheongju)
- 2 Tbsp oligosaccharide (or corn syrup)
- 3 Tbsp sesame oil
Cooking Instructions
Step 1
First, in a pot, combine the roughly chopped napa cabbage kimchi with all the seasoning ingredients listed above (doenjang, gochugaru, minced garlic, cooking wine, oligosaccharide, and sesame oil). Stir-fry over medium-high heat for about 10 minutes. Stir-frying the kimchi first will draw out a deep umami flavor, making it much more delicious.
Step 2
Once the kimchi is sufficiently stir-fried, add 1 liter (1000ml) of water. Then, add the large-cut onion, chopped green onions, and diagonally sliced chili peppers. Reduce the heat to medium-low, cover with a lid, and simmer for about 20 minutes until all the ingredients are tender.
Step 3
If you are using 5 whole sardines, clean and prepare them. If you’re using canned fish, using sardines, saury, or mackerel along with their liquid will make it more convenient and add a deeper flavor. (If using fresh fish, cutting them into bite-sized pieces so they can be eaten with the bones is recommended.)
Step 4
Gently add the prepared sardines (or canned fish) to the pot. Let it simmer over medium heat for about 10 more minutes, until the liquid has reduced slightly and covers the ingredients halfway (soupy but not watery). Be careful not to break the fish apart.
Step 5
Finally, continue to simmer for about 5 more minutes until the stew has thickened slightly to your desired consistency. Your delicious Sardine Kimchi Stew is now ready! Enjoy it with a warm bowl of rice.
