- 2 Tbsp cooking wine (mirin)
- 1 Tbsp brown sugar
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp sesame oil
- 0.5 Tbsp toasted sesame seeds
- Pinch of black pepper
- 2 Tbsp cooking oil
- 0.5 Tbsp soy sauce
- 0.5 Tbsp anchovy sauce
- 2 Tbsp cooking wine (mirin)
- 1 Tbsp brown sugar
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp sesame oil
- 0.5 Tbsp toasted sesame seeds
- Pinch of black pepper
Cooking Instructions
Step 1
First, gather all the ingredients for your stir-fried snap peas and anchovies. Fresh ingredients are the foundation of a delicious meal.
Step 2
Rinse the snap peas under running water and remove their stems. If the snap peas are quite long, cut them in half to make bite-sized pieces. This helps the seasoning penetrate better and makes them easier to eat.
Step 3
To remove any fishy smell and make the anchovies crispier, place them in a dry, ungreased pan. Stir-fry over low heat for 1-2 minutes. It’s important to roast them thoroughly until the fishy aroma dissipates.
Step 4
Now it’s time to stir-fry the snap peas. Add 2 tablespoons of cooking oil to the pan and add the prepared snap peas. Sauté for about 1 minute until they soften slightly. Then, add 0.5 Tbsp soy sauce, 0.5 Tbsp anchovy sauce, 2 Tbsp cooking wine, and 1 Tbsp brown sugar. Stir-fry quickly for another 30 seconds to allow the snap peas to absorb the seasonings. This step infuses the snap peas with a deep, savory flavor.
Step 5
Add the roasted anchovies back into the pan with the snap peas. Toss them together gently for just about 1 minute. Be careful not to overcook, as this can make the anchovies tough.
Step 6
Finally, add 1 Tbsp corn syrup (or rice syrup) and give it another quick stir. The syrup will coat the anchovies and snap peas, giving them a beautiful glossy sheen.
Step 7
Turn off the heat. Drizzle in 1 Tbsp of sesame oil and sprinkle 0.5 Tbsp of toasted sesame seeds. The residual heat will bring out the nutty aroma of the sesame oil, and the sesame seeds add a delightful crunch and nutty flavor.
Step 8
Add a pinch of black pepper and give everything one final gentle stir. Your nutritious and delicious stir-fried snap peas with anchovies are now ready! Enjoy them with a warm bowl of rice.
