  • 1 cup soaked Seoritae (black soybeans)
  • 3 cups rice
  • 3.5 cups water (from soaking Seoritae, or mixed with plain water)

First, prepare the Seoritae. Rinse them gently, similar to how you wash rice, to remove any dust or impurities. Be careful not to scrub too hard, as this can wash away some of the beans’ nutrients.

For a tender texture, soak the rinsed Seoritae for at least 6 hours, or preferably overnight. The beans will expand in volume as they soak, so use a large enough bowl.

After soaking, the water will turn a light wine color. Do not discard this water! It contains the nutrients and flavor of the beans, which will make your rice extra rich and delicious.

Rinse the rice thoroughly. Change the water a few times until it runs clear. Let the rinsed rice soak for about 30 minutes; this helps the grains become softer and more lustrous.

Now, combine the soaked rice and the soaked Seoritae in a pot. Add 3.5 cups of the reserved soaking water. If you don’t have enough soaking water, top it up with plain water until you reach the 3.5-cup mark. A good rice-to-water ratio is typically around 1:1.1 to 1:1.2.

Bring the pot to a boil over high heat. As soon as the water begins to boil vigorously, immediately reduce the heat to medium-low. Cover the pot with a lid and let it simmer for about 12 minutes. This step ensures the rice cooks evenly without burning.

After 12 minutes of simmering, turn off the heat completely. Keep the lid on and let the rice steam for 10 minutes. This steaming process allows the moisture to distribute evenly, resulting in perfectly cooked, moist rice.
