Main Ingredients

  • Seaweed (Tot) 1/2 cup (cleaned)
  • Tofu 1 block (approx. 160g)
  • Scallions 5 stalks
  • Green chili pepper 1
  • Fish sauce 1 Tbsp
  • Minced garlic 1 Tbsp
  • Black pepper, a pinch

Cooking Instructions

Step 1

Cut the tofu into bite-sized cubes, about 2cm. The seaweed (tot) can be used directly without soaking. Thinly slice the green chili pepper diagonally, and chop the scallions.

Pour 2.5 cups (500ml) of water into a pot and bring to a boil. Add the seaweed (tot) first and simmer for about 5 minutes. Once the seaweed is partially cooked, add the tofu and boil for another few minutes.

While the soup is simmering, skim off any foam that rises to the surface. This will help create a cleaner and clearer broth.

Once the soup returns to a boil, add the chopped scallions and green chili pepper. Slowly pour in the beaten egg in a thin stream around the edges of the pot, allowing it to cook into delicate ribbons.

After pouring in the egg, avoid stirring immediately. Reduce the heat to low and let it sit undisturbed for about 1 minute until the egg is set. For added color, you can add thinly sliced red chili pepper at this stage.
