Fresh Vegetables
  • 1 bunch lettuce
  • 2 heads romaine lettuce
  • 3 bell peppers
  • 5 cucumbers
  • 2 carrots
  • 1kg cherry tomatoes

Delicious Dressing
  • 4 Tbsp olive oil
  • 4 Tbsp balsamic vinegar
  • 2 Tbsp stevia
  • A pinch of basil powder
  • 1 Tbsp perilla seeds

Cooking Instructions

Step 1

First, prepare your fresh vegetables. Gather 1 bunch of lettuce, 2 heads of romaine lettuce, 3 bell peppers, 5 cucumbers, 2 carrots, and 1kg of ripe cherry tomatoes.

Step 2

Wash the carrots thoroughly, then thinly julienne them. Thinly sliced carrots will have a tender texture and blend well with other ingredients.

Step 3

Cut the cucumbers in half lengthwise. Use a spoon to gently scrape out and remove the seeds. Removing the seeds prevents excess water from making the salad soggy.

Step 4

Dice the seedless cucumbers into bite-sized pieces.

Step 5

Cut off the stem and the base ends of the bell peppers. Then, slice them in half.

Step 6

Carefully remove the seeds and the white pith from the inside of the bell peppers. This step ensures a clean, non-bitter flavor.

Step 7

Dice the deseeded bell peppers into bite-sized pieces, similar to how you prepared the cucumbers.

Step 8

Wash the fresh cherry tomatoes and cut each one in half. Halving the tomatoes allows the dressing to penetrate the insides, enhancing the flavor.

Step 9

Rinse the romaine lettuce under cold running water, shake off excess moisture, and tear or chop it into bite-sized pieces (about 3-4 cm).

Step 10

Wash the lettuce leaves thoroughly, pat them dry, and then chop or tear them into similar bite-sized pieces as the romaine lettuce.

Step 11

Now, let’s make the delicious dressing. In a bowl, combine 4 tablespoons of olive oil, 4 tablespoons of balsamic vinegar, 2 tablespoons of sweet stevia, a pinch of fragrant basil powder, and 1 tablespoon of nutty perilla seeds.

Step 12

Add all the dressing ingredients to the bowl. Finally, sprinkle in the perilla seeds for an added nutty flavor.

Step 13

Since the volume of vegetables is quite large, it might be difficult to mix everything in one go. If so, divide the vegetables into two large bowls and pour the dressing over them. Gently toss everything together to combine, being careful not to mash the vegetables.

Step 14

Serve the finished salad poke generously over warm brown rice. Enjoy this nutritious and satisfying meal! Start your day with a healthy and delicious poke bowl for an energetic boost!
