We’ve made a wonderfully savory stir-fried side dish using oyster mushrooms, which are not only affordable but also packed with nutrients. We’ve generously added perilla powder to enhance the flavor, making it a perfect dish for a meal or even as a snack with drinks. It’s so easy to make, anyone from a beginner cook to someone living alone can succeed!
Ingredients- Oyster mushrooms 200 grams (about 1 handful)
- Carrot 20 grams (about 1/5 of a medium carrot)
- Green part of scallion 1 stalk
- Minced garlic 1 teaspoon
- Salt 1/2 teaspoon
- Olive oil 1 tablespoon
- Ground perilla seeds (hulled) 1-2 tablespoons (adjust to taste)
Cooking Instructions
Step 1
Prepare about 200 grams of oyster mushrooms. Lightly rinse them under running water, drain well, and then tear them into bite-sized pieces with your hands. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the torn oyster mushrooms and stir-fry until they release their moisture. Season with 1/2 teaspoon of salt and continue to cook until the mushrooms are tender and wilted. Sautéing with salt at this stage helps the mushrooms retain their moisture and stay tender.
Step 2
Prepare about 20 grams of carrot and julienne it into fairly thick strips. If the carrot strips are too thin, they can break apart and make the dish look messy. Aim for strips that are similar in thickness to the mushroom pieces. Once the mushrooms are partially cooked, add the julienned carrots to the pan and stir-fry together until the carrots are slightly tender. Avoid overcooking the carrots, as they can become mushy.
Step 3
When the carrots are tender and well combined with the mushrooms, add 1 teaspoon of minced garlic. Stir-fry for about 1 minute until the garlic is fragrant. It’s best to add the garlic towards the end of cooking to prevent it from burning.
Step 4
Finely chop the green part of 1 scallion. Add the chopped scallions to the pan and stir-fry briefly to release their aroma. Be careful not to overcook the scallions; you want them to retain a slight crunch.
Step 5
Finally, add 1-2 tablespoons of ground perilla seeds (hulled) and toss everything together until well combined. The amount of perilla powder can be adjusted to your preference. This ingredient significantly enhances the nutty, savory flavor! Once everything is mixed, remove from heat and enjoy your delicious stir-fry.
