Pancake Batter Ingredients
  • 350g pancake mix
  • 1 fresh carrot (medium-sized)
  • 1 pack of milk (200ml)
  • 2 eggs

Cooking Instructions

Step 1

Before you start cooking, prepare all your ingredients, a grater, a whisk, and a bowl for mixing the batter. Measuring out all the ingredients beforehand will make the cooking process much smoother.

Step 2

Wash one medium-sized carrot thoroughly, peel it, and then grate it finely using the grater. The subtle sweetness and moisture from the carrot will enhance the flavor of your pancakes.

Step 3

Place the grated carrot into the bowl and crack two fresh eggs into it. The eggs will mix well with the carrot and add to the batter’s tenderness.

Step 4

Add the 350g of pancake mix to the bowl in three additions, whisking gently after each addition until just combined. Adding it in stages prevents lumps and helps create a smooth batter.

Step 5

As you mix the batter, you might notice it becomes thicker than expected due to the moisture released from the carrots. This is a natural occurrence, so don’t be alarmed.

Step 6

If the batter is too thick to form into pancake shapes, gradually add about 4 tablespoons (approx. 60ml) of milk at a time, whisking gently until you reach a pourable consistency, similar to pancake batter.

Step 7

Preheat a non-stick pan over medium heat and lightly grease it with olive oil or butter. Pour about one ladleful of batter onto the heated pan to create round pancakes. Aim for a moderate thickness.

Step 8

When bubbles start to appear on the surface of the pancake, it’s a sign that it’s cooking well. Once there are enough bubbles, carefully flip the pancake with a spatula.

Step 9

Cook the other side until golden brown, usually for another 1-2 minutes. This ensures the pancake is cooked through and wonderfully moist. Your delicious carrot pancakes are now ready!

Step 10

Serve your freshly made, warm carrot pancakes on a plate. Enjoy them with your favorite toppings like maple syrup, honey, or fresh fruits. They pair wonderfully with a glass of cold milk for a perfect brunch!^^
