  • Fresh salad greens mix 200g (e.g., romaine, kale, chard, beet greens, chicory, or your favorite combination)
  • Cucumber 60g (about 1/4 medium cucumber)
  • Cherry tomatoes 5 pieces
  • Cooked chicken breast 100g
  • Hard-boiled egg 1 piece
  • Canned corn kernels 2 Tbsp (drained)
  • Cooked chickpeas 2 Tbsp
  • Crispy onion flakes 1 Tbsp

Refreshing Dressing

  • Extra virgin olive oil 3 Tbsp
  • Fresh lemon juice 1 Tbsp

Cooking Instructions

Begin by thoroughly washing all your salad greens under cold running water. Gently pat them dry with a paper towel to remove excess moisture.

Chop the washed salad greens into bite-sized pieces, approximately 3-4 cm in length, suitable for a bowl. Using a variety of greens like romaine, kale, chard, beet greens, and chicory will add more texture and flavor complexity.

Dice the cucumber into roughly 1cm cubes. Wash the cherry tomatoes, remove their stems, and either halve them or cut them into quarters, depending on their size.

Place the egg in a saucepan, cover with cold water, and bring to a boil. Cook for about 10-12 minutes for a hard-boiled egg. Once cooked, transfer the egg to an ice bath to cool, then peel and slice it or cut it into quarters.

Arrange the chopped salad greens in your bowl. Neatly place the diced cucumber, cherry tomatoes, and sliced hard-boiled egg on top. Add the cooked chicken breast, drained corn kernels, chickpeas, and finally, sprinkle the crispy onion flakes for a delightful crunch.

Drizzle the prepared dressing evenly over the salad.
