  • 1 Korean chili pepper (add more if you like it spicy)

  • Pinch of salt (adjust to taste)
  • Pinch of black pepper
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • Pinch of sesame seeds (for added nuttiness)

Cooking Instructions

First, prepare all the vegetables. Wash the zucchini thoroughly, trim the ends, and slice it into 0.5cm thick half-moon shapes. Peel the onion and carrot, then julienne them thinly. Remove the stems from the Korean chili pepper and mince it finely. Once all ingredients are prepped, you’re ready to start cooking!

Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the prepared zucchini first and stir-fry it. Stir-frying zucchini from the start helps to reduce excess moisture and maintain a chewy texture. The key is to sauté the zucchini until it becomes slightly translucent.

Once the zucchini is partially cooked, add 1 Tbsp soy sauce, 1/2 Tbsp soup soy sauce (optional), 1 Tbsp minced garlic, a pinch of salt, and a pinch of black pepper. Stir-fry everything together to allow the seasonings to evenly coat the zucchini. This step creates a delicious base flavor. You can also use fish sauce instead of soy sauce for an extra umami kick.

Now, add the julienned onion and carrot, and the minced Korean chili pepper. Stir-fry until all ingredients are well combined and the vegetables are tender-crisp. Right before turning off the heat, drizzle in 1 Tbsp sesame oil and sprinkle with a pinch of sesame seeds, then gently mix. The fragrant sesame oil will further enhance the flavor of your stir-fried zucchini.
