Main Ingredients
- 1 medium-sized pumpkin
- 2 and 1/2 Tbsp sugar (adjust to taste)
- 2/3 Tbsp coarse sea salt
- 2 Tbsp glutinous rice flour
- 400ml water

Step 1
To make the pumpkin easier to handle, wash it thoroughly and microwave it for about 5 minutes. This will soften the skin slightly, making it much easier to cut.
Step 2
Carefully cut the microwaved pumpkin into manageable pieces. Then, use a spoon to scoop out and discard all the seeds and stringy bits from the inside.
Step 3
Cut the pumpkin pieces into smaller chunks and remove the tough outer skin completely. You’ll only need the flesh of the pumpkin.
Step 4
Place the peeled and seeded pumpkin flesh into a blender. Add 300ml of water and blend until you achieve a very smooth and fine purée. If the mixture is too thick and difficult to blend, add a little more water until you reach your desired consistency.
Step 5
In a separate small bowl, pour 100ml of water. Add the 2 tablespoons of glutinous rice flour and whisk thoroughly with a fork or small whisk until completely dissolved and smooth, ensuring there are no lumps. This step is crucial for a creamy porridge.
Step 6
Pour the smooth pumpkin purée into a wide pot. Add 2 and 1/2 tablespoons of sugar and 2/3 tablespoon of coarse sea salt. Stir well to combine.

Place the pot over medium heat. Stir constantly to prevent sticking to the bottom of the pot. Once the porridge begins to bubble and boil, gradually pour in the dissolved glutinous rice flour mixture while stirring vigorously to incorporate it smoothly.

After adding the glutinous rice flour mixture and stirring well, reduce the heat to low. Continue to stir and cook until the porridge reaches your desired thickness. Taste the porridge and add more sugar if you prefer it sweeter. Your delicious pumpkin porridge is almost ready!
