  • 100g minced beef (lean cut recommended)
  • 1/3 stalk green onion (finely chopped)
  • 1/4 onion (finely chopped)
  • 1/3 yellow bell pepper (seeds removed, finely chopped)
  • 1/3 red bell pepper (seeds removed, finely chopped)

Fried Rice Seasoning

  • 1/2 to 1 Tbsp oyster sauce (adjust to taste)
  • Pinch of salt (for final seasoning)
  • Pinch of black pepper (to remove gaminess and add flavor)
  • 1 Tbsp sesame oil (for nutty aroma)
  • Pinch of toasted sesame seeds (for garnish)

First, it’s crucial to remove excess moisture from the minced beef. Spread the minced beef thinly on a paper towel, then gently press down with another paper towel to absorb and remove any blood or liquid. This step helps reduce any gamey odor and results in a cleaner taste.

To the drained minced beef, add the marinade ingredients: 1 Tbsp soy sauce, 1 Tbsp cooking wine (mirin), a pinch of black pepper, and 1 tsp minced garlic. Mix everything thoroughly with your hands until well combined. Let it marinate for about 10 minutes to allow the flavors to penetrate the meat, making it even more delicious.

Next, we’ll finely chop the colorful bell peppers. Start by cutting off the stem and base of the peppers, then slice them in half. Thoroughly remove the seeds and pith from the inside. Finally, chop them into small pieces, about 0.5cm in size.

Peel the onion and finely chop it into approximately 0.5cm pieces. Similarly, chop the green onion, including both white and green parts, into small pieces (about 0.5cm length). Chopping the vegetables into uniform sizes ensures they cook evenly.

Now, let’s heat up the pan for stir-frying. Add about 2 Tbsp of cooking oil to a frying pan and add the chopped green onions. Cook over low heat, stirring gently. The key is to let the sweet aroma of the green onions infuse into the oil.

After adding the rice, use a spatula to gently break up the rice grains and mix them thoroughly with the other ingredients.
