Main Ingredients- 1 bunch fresh chives (approx. 50g)
- 2 fresh eggs
Cooking Instructions
Step 1
First, gather your ingredients to prepare the delicious chive and egg scramble. You’ll need one bunch of fresh chives, two eggs, and cooking wine and salt to enhance the flavor.
Step 2
Wash the chives thoroughly and pat them dry. Cut them into bite-sized pieces, about 1-2 cm long. Place the chopped chives in a bowl. Crack the two eggs into the same bowl. Add 1 tablespoon of cooking wine, which helps remove any eggy odor, and a pinch of salt for flavor. Whisk everything together using a fork or a whisk until the chives and eggs are well combined and smooth. It’s important to whisk until there are no lumps.
Step 3
Heat 1 tablespoon of olive oil in a non-stick pan over medium-low heat. Gently swirl the pan to coat the bottom with oil. Carefully pour the prepared chive and egg mixture into the hot pan. Don’t stir immediately; wait until the edges begin to set slightly. Then, using a spatula, gently stir and fold the mixture to create soft, fluffy scrambled eggs. Avoid high heat, as this can cause the eggs to burn or become dry. Cook gently over low heat.
Step 4
Once the chive and egg mixture is cooked to your desired soft scramble consistency, turn off the heat. Finally, sprinkle in 1 tablespoon of sesame seeds for a nutty aroma and a pinch of black pepper, if desired. Gently mix them in. Transfer the finished chive and egg scramble to a serving plate. This visually appealing and delicious chive and egg scramble is best enjoyed while warm.
