Ingredients

  • 400g glutinous rice (sweet rice)
  • 130g brown sugar
  • 1 cup (200cc) water
  • 3 Tbsp soy sauce
  • Cinnamon powder (to taste)
  • 1 Tbsp sesame oil
  • 1 handful raisins
  • 1 handful walnuts
  • 1 handful pine nuts
  • 1 handful prepared chestnuts
  • 5-6 jujubes (red dates)

Cooking Instructions

First, prepare the jujubes to add a beautiful color and flavor to your sweet rice cake. Wash 5-6 jujubes thoroughly. Using a knife, carefully cut around the pit to remove it, then peel the flesh. Slice the peeled jujubes thinly into strips.

Make the sweet and savory sauce for the sweet rice cake. In a 200cc measuring cup, add 1 cup of water. Then, add 130g of brown sugar and 3 tablespoons of soy sauce for a rich flavor. Stir well with a whisk or spoon until the sugar is completely dissolved, ensuring no sugar granules remain.

Place the pre-soaked glutinous rice into the rice cooker and pour over the sauce. It’s best to soak the glutinous rice for at least 2 hours beforehand and drain it well in a sieve. Put the soaked rice into the inner pot of the rice cooker. Pour the prepared soy sauce and sugar mixture over the rice. Arrange the raisins, walnuts, pine nuts, prepared chestnuts, and sliced jujubes as toppings on top of the rice.

Now it’s time to cook the sweet rice cake in the rice cooker. Close the lid of the rice cooker and select the ‘cook’ setting. Once cooking is complete, carefully remove the toppings from the rice cooker and set them aside in a separate bowl. Transfer the cooked sweet rice cake from the rice cooker into a wide bowl to cool slightly.

Enhance the flavor of the warm sweet rice cake. In the bowl with the rice cake, add 1 tablespoon of sesame oil for a nutty aroma and a sprinkle of fragrant cinnamon powder to your preference. (Adjust the amount of cinnamon powder to your liking.) Mix gently, then add the reserved toppings back into the sweet rice cake and mix everything together softly.

Finally, shape the sweet rice cake for serving. Use a traditional sweet rice cake mold or any square-shaped food container you have at home to press and shape the sweet rice cake. Carefully unmold it to reveal a delicious-looking sweet rice cake. Once cooled, cut it into desired portions, wrap individually, and freeze for long-term storage.
