  • 1 sweet onion

First, thoroughly wash the carrots and slice them into half-moon shapes, about 2-3 cm thick. Peel the onion and thinly slice it into 0.5 cm thick slices. Slicing them this way helps them cook faster.

Heat a pot over medium heat. Add 3 tablespoons of olive oil, then add all the sliced onions.

Sauté the onions over medium heat until they become translucent and tender. This process helps to draw out the natural sweetness from the onions.

Once the onions have softened, add 0.7 Tbsp of minced garlic and sauté for about 1-2 minutes more. As the garlic becomes fragrant, continue to cook until the onions turn a light golden brown. Caramelizing the onions like this adds a deeper flavor and enhances their natural sweetness, making the soup even more delicious. Be careful not to burn them while sautéing.

Next, add all the prepared carrots to the pot and sauté for another 5 minutes with the onions. This helps the carrots soften slightly and meld with the olive oil.

Carefully pour 600ml of water into the pot. Once it comes to a boil, reduce the heat to medium, cover the pot, and simmer for about 10 minutes until the carrots are completely tender. They should be easily pierced with a fork.

Turn off the heat temporarily. Use an immersion blender (hand blender) to purée the contents of the pot until very smooth. It’s important to blend until there are no lumps for a velvety soup texture. If you don’t have an immersion blender, a regular blender can be used, but exercise caution when blending hot liquids.

Now, slowly pour in 150ml of fresh milk. If you desire a richer and creamier taste, you can add about 50ml of heavy cream for an even more luxurious flavor. (It’s still delicious without heavy cream!)

Return the soup to low heat. Add 0.3 Tbsp of salt to season. Taste and adjust the salt according to your preference. Once the soup begins to simmer gently, turn off the heat. Your delicious carrot soup is ready. Be mindful not to over-boil, as the milk can curdle.

Ladle the finished carrot soup into a nice bowl. Sprinkle with a pinch of black pepper and garnish with dried parsley, if desired. Serving it with warm bread or croutons makes for a perfect hearty breakfast or a leisurely brunch.
