Nutrient-Rich Carrot Packed Gimbap
Make Diet-Friendly Gimbap Packed with Carrots!
Try making gimbap with plenty of carrots. It’s surprisingly delicious. This recipe is great for a light and healthy meal, offering a satisfying crunch and vibrant color.
Gimbap Ingredients- 2 sheets of Gim (seaweed)
- 1 bowl of warm rice
- 1 medium carrot
- 2 fresh eggs
- 2 pieces of danmuji (pickled radish)
- Canola oil or cooking oil, as needed
For Stir-frying Carrots- 1 tsp salt
- 1 Tbsp sesame oil

Cooking Instructions
Step 1
First, thoroughly wash and prepare the carrots, which are the star ingredient of this gimbap.
Step 2
Finely julienne the prepared carrots. Cutting them thinly is key, as thicker pieces will take longer to cook and result in a less pleasant texture.
Step 3
Heat a pan over medium-low heat and add a generous amount of canola oil. Add the julienned carrots and 1 tsp of salt, then stir-fry until the carrots are slightly softened. Stir in 1 Tbsp of sesame oil at the end to add a nutty aroma and mix well.
Step 4
In a bowl, crack the 2 fresh eggs. Add 1 pinch of salt to break down the chalazae (the white, stringy bits) and whisk gently with a fork until smooth. A smooth egg mixture will yield a delicate omelet.
Step 5
Lightly grease a rectangular egg pan (or a regular frying pan) over low heat. Pour the whisked egg mixture thinly into the pan and cook until golden brown on both sides, creating an egg omelet. Once cooled slightly, cut the omelet in half to make it easier to place inside the gimbap.
Step 6
Season the warm rice by adding 1 pinch of salt and 1 Tbsp of sesame oil. Gently mix with a rice paddle, being careful not to mash the rice grains.
Step 7
Now, it’s time to roll the gimbap. Place 2 sheets of gim overlapping on a bamboo rolling mat, or adjust placement if using single sheets.
Step 8
Spread the seasoned rice evenly over the gim, covering about 3/4 of the surface with the back of a spoon. Avoid spreading the rice too thickly, as this can cause the gimbap to break when rolled.
Step 9
Generously layer the stir-fried carrots on top of the rice. More carrots will result in a richer flavor and texture.
Step 10
Arrange the prepared egg omelet pieces neatly over the carrots.
Step 11
Finally, place the crunchy danmuji (pickled radish) lengthwise on top of the other fillings. Danmuji adds a refreshing tang to the gimbap.
Step 12
Using the bamboo mat, carefully and tightly roll the gimbap, ensuring the fillings stay in place. Lightly moisten the edge of the gim with water to help it seal securely.
Step 13
Slice the rolled gimbap into bite-sized pieces (about 1.5 cm thick) using a gimbap knife or a clean, sharp knife. Dipping the knife lightly in water between slices will prevent the rice from sticking and ensure clean cuts. Arrange the beautifully sliced gimbap on a plate and enjoy your delicious creation!
