How to Make Delicious Cabbage Rolls (Yangbaechu Ssambap) with Homemade Nutty Ssamjang

Main Ingredients
- 8 fresh cabbage leaves
- 2 bowls cooked rice
- 1 Tbsp sesame oil
- A little chopped scallion (for garnish)
Nutty Ssamjang (Dipping Sauce)
- 1 Tbsp soybean paste (doenjang)
- 1 Tbsp chili paste (gochujang)
- 1 tsp finely minced green chili
- 1 tsp finely minced red chili
- 1 tsp finely minced onion
- 1 walnut, finely chopped
- 1 Tbsp rice syrup (jocheong) or corn syrup
- 1 Tbsp soybean paste (doenjang)
- 1 Tbsp chili paste (gochujang)
- 1 tsp finely minced green chili
- 1 tsp finely minced red chili
- 1 tsp finely minced onion
- 1 walnut, finely chopped
- 1 Tbsp rice syrup (jocheong) or corn syrup
Cooking Instructions
Step 1
Wash the cabbage leaves thoroughly under running water. Place them in a steamer basket and steam for about 5-7 minutes until tender. Be careful not to overcook, as they can become mushy. Let the steamed cabbage cool slightly; it will be easier to handle.
Step 2
While the cabbage is steaming, let’s prepare the delicious ssamjang! In a bowl, combine the doenjang, gochujang, minced green chili, minced red chili, minced onion, finely chopped walnuts, and rice syrup (or corn syrup). Mix well with a spoon until all ingredients are thoroughly combined. Kneading the mixture will enhance the flavor.
Step 3
Drizzle 1 tablespoon of sesame oil over the warm cooked rice and gently mix with a spatula, being careful not to mash the rice grains. Once the rice is ready, lightly wet your hands and shape the rice into small, round patties, similar to mini rice balls.
Step 4
Cut the steamed cabbage leaves in half. Score or trim the thick core of each leaf to make it more pliable. Place a prepared rice patty onto a cabbage leaf, and gently roll the cabbage leaf around the rice, tucking it in to form a neat roll. It will look like a delicate blossom.
Step 5
Generously spoon the prepared nutty ssamjang over each cabbage roll. You can adjust the amount of ssamjang to your liking.
Step 6
Finally, garnish with finely chopped scallions for a touch of color and freshness. Your beautifully crafted Yangbaechu Ssambap is ready to be enjoyed!
