Nutrient-Rich Beef, Carrot, and Cauliflower Porridge (Mid-Stage)

This is a safe baby food recipe for infants allergic to cheese, egg whites, milk, or crab. Rice is known to boost energy and strengthen the spleen and stomach. Furthermore, the carbohydrates in rice have a high digestion and absorption rate of 98%, making it easier to digest compared to other grains. Carrots, often called the ‘Emperor of Vitamin A,’ are packed with vitamins and various nutrients essential for your baby’s growth. The beta-carotene in carrots provides a powerful antioxidant effect, aiding in anti-aging and cancer prevention. Lutein and lycopene are rich in nutrients beneficial for eye health, boosting immunity, and helping to prevent high blood pressure and arteriosclerosis. Cauliflower, also known as flower cabbage, is rich in minerals like calcium, potassium, and folate, making it excellent for skin beauty, immune enhancement, and fatigue recovery. It’s considered a superfood due to its high vitamin C and dietary fiber content, and its potent anti-cancer properties. Just 100g of cauliflower can fulfill the daily recommended intake of vitamin C. Most importantly, glucosinolates and sulforaphane are beneficial for cancer prevention and inhibiting cancer cell proliferation.

Ingredients

  • 30g Rice
  • 30g Beef (lean cut)
  • 20g Carrot
  • 20g Cauliflower
  • 400ml Water

Cooking Instructions

Step 1

Rinse the rice and beef thoroughly, then soak them separately in cold water for at least 30 minutes. This will help the rice cook tenderly and the beef become softer.

Step 1

Step 2

Place the soaked rice and 50ml of water into a blender. Pulse until the rice grains are broken down into about 1/4 of their original size. Avoid blending too finely for a better texture.

Step 2

Step 3

Gently rinse the soaked beef under running water to remove any remaining blood. Pat it dry thoroughly with paper towels.

Step 3

Step 4

Trim the cauliflower into bite-sized florets. Soak them in water with about 1/2 teaspoon of baking soda for over 5 minutes to help remove any residual pesticides.

Step 4

Step 5

Rinse the cleaned cauliflower florets under cold water, then blanch them in boiling water for about 5 minutes until tender. Cooking them beforehand makes them easier to mince.

Step 5

Step 6

Once the blanched cauliflower has cooled slightly, finely mince it into pieces approximately 0.3mm in size. Achieving a fine consistency is key for baby food.

Step 6

Step 7

Wash the carrot thoroughly, peel its skin, and finely mince it to a size of about 0.3mm, similar to the cauliflower. Uniform pieces are good for practicing chewing.

Step 8

In a pot, combine the minced carrot with 150ml of water. Cook over medium heat for 5-6 minutes until the carrot is soft and tender.

Step 8

Step 9

To the pot where the carrots were cooked, add the soaked rice, beef, and the remaining 200ml of water.

Step 9

Step 10

Add all the minced cauliflower to the pot. Now all the ingredients are combined.

Step 10

Step 11

Begin cooking over high heat. It’s crucial to stir continuously with a spatula to prevent the rice and beef from sticking to the bottom.

Step 11

Step 12

Once the porridge comes to a rolling boil, reduce the heat to low. Continue to stir gently and constantly to prevent sticking, even on low heat.

Step 12

Step 13

When the rice, beef, carrot, and cauliflower are well-cooked, tender, and have reached your desired porridge consistency, turn off the heat. If it seems too thick, you can add a little more water.

Step 14

Allow the finished porridge to cool to a baby-friendly temperature. Then, portion it into baby food containers.

Step 14

Step 15

This recipe yields approximately three 100ml portions of baby food. Store according to your baby’s feeding schedule.
