Main Ingredients
  • Soaked dried seaweed: 1.5 to 2 bowls
  • Beef (for soup): 1/2 bowl

Seasoning & Broth
  • Minced garlic: 1 Tbsp
  • Fish sauce or soy sauce for soup: 1 Tbsp
  • Rice water: Generous amount
  • Water: As needed
  • Salt (to taste): 1/3 to 1/2 Tbsp
  • Ground perilla seeds: 4-5 Tbsp
  • Sesame oil: 2-3 drizzles
  • MSG-based seasoning (optional): 2-3 Tbsp

Cooking Instructions

Step 1

First, place the soaked seaweed in a pot. Drizzle about 2-3 swirls of sesame oil over it and stir-fry. Then, add the beef and stir-fry it together with the seaweed. Once the beef is partially cooked, add about 1/3 Tbsp of salt to season and continue stir-frying. This step helps to enhance the savory flavors of both the seaweed and beef.

Step 2

After stir-frying the ingredients, pour in a generous amount of rice water. Rice water adds a wonderfully nutty and smooth texture to the broth. If the liquid level is still low, top it up with regular water until the pot is nicely filled.

Step 3

At this point, to deepen and freshen the broth’s flavor, add dried or fresh onion skins. Onion skins act as a natural flavor enhancer, adding a subtle complexity to the soup.

Step 4

Once you’ve added the rice water and regular water, add about 2-3 heaping tablespoons of MSG-based seasoning (optional). Next, add 1 Tbsp of fish sauce (or soy sauce for soup) and 1 Tbsp of minced garlic. Bring the soup to a rolling boil over high heat, allowing the flavors to meld together.

Step 5

After the soup has boiled well, taste it to check the seasoning. If it tastes bland, add about another 1/3 Tbsp of salt to adjust the flavor according to your preference. Be careful not to add too much at once; add salt gradually.

Step 6

Once the seasoning is adjusted and the soup is boiling vigorously, reduce the heat to low. At this stage, your basic beef seaweed soup is complete! Can you already smell the delicious aroma?

Step 7

Now, it’s time to add the perilla seeds to make this beef seaweed soup even more special. Add a generous 4-5 Tbsp of ground perilla seeds. Adding plenty of perilla seeds will make the broth wonderfully nutty and highly nutritious.

Step 8
