Freshly cooked, warm rice paired with an abundance of bean sprouts, fragrant chives, and a savory pork sauce creates a truly delightful dish. Perfect for special occasions or to add a touch of richness to an everyday meal.

  • 1 handful of chives (approx. 50g)
  • 300g ground pork

First, thoroughly wash the rice. When making bean sprout rice, use slightly less water than you normally would for cooking rice. This will result in fluffy, perfectly cooked grains. (e.g., about 80% of your usual water amount)

Rinse the fresh bean sprouts under running water until clean. You will divide the rinsed bean sprouts into two portions. Half will be placed on top of the rice in the rice cooker while it cooks, and the other half will be blanched later to be mixed with the sauce.

Bring a pot of water to a boil. Blanch half of the bean sprouts for about 1 minute to keep them crisp. Immediately rinse them under cold water to stop the cooking and drain well. This step enhances their crunchy texture.

Now, let’s make the delicious sauce that will define your bean sprout rice! In a bowl, combine the gochugaru, soy sauce, sugar, corn syrup (or oligodang), ground sesame seeds, sesame oil, and black pepper. Mix well.

Be aware that mixing the rice with only this sauce at this stage might make it too salty. Please keep this in mind! Adjusting the seasoning is crucial for bean sprout rice as it’s meant to be mixed with rice.

Add half a paper cup (approx. 100ml) of water to the sauce to balance the seasoning. Adding water will soften the sauce’s consistency, making it perfect for mixing with the rice.

Wash the fragrant chives thoroughly and then chop them finely, similar to how you would cut scallions. Add the chopped chives to the prepared sauce and mix evenly. The chives’ aroma will infuse the sauce, adding a richer flavor.

Season the ground pork with a pinch of black pepper. Heat a lightly oiled pan and stir-fry the pork over high heat until cooked through. Stirring with chopsticks or a fork will help prevent it from clumping.

Add the cooked ground pork to the prepared sauce. The savory flavor of the pork will blend with the sauce, creating a deeper, more complex taste.
