A special dish for my husband who loves vegetables! Introducing a Perilla Leaf Ssamjang Salad that anyone can easily make by adding savory ssamjang dressing to fresh perilla leaves. It’s so delicious it’ll be a rice thief even without complex cooking. My husband finished a whole plate by himself – it’s that good!

Ingredients

  • 1 bunch fresh perilla leaves
  • 1 Tbsp chopped green onion
  • Pinch of coarse salt (for blanching)

Ssamjang Dressing

  • 1/2 Tbsp commercial ssamjang (or adjust to taste)
  • 1 tsp minced garlic
  • 1 Tbsp fragrant perilla oil
  • 1/2 Tbsp sesame seeds or ground sesame seeds

Cooking Instructions

Step 1

First, it’s important to prepare the perilla leaves thoroughly. Trim off any yellowed leaves or tough stems. Rinse them several times under running water to remove any dirt or debris.

Green onions will add a wonderful aroma. Finely chop them. It’s best to slice them thinly so the dressing adheres well.

Now, let’s gently blanch the perilla leaves. Fill a pot with plenty of water and bring it to a boil. Once the water is at a rolling boil, add a pinch of coarse salt. Then, add the perilla leaves, starting with the stem parts which are tougher, and blanch for just 1-2 minutes. Be careful not to over-blanch, as they can become mushy.

Immediately rinse the blanched perilla leaves under cold water to cool them down. This step helps maintain their vibrant green color and crisp texture. Gently squeeze out the excess water with your hands, then cut them into bite-sized pieces.

Let’s make the delicious dressing! Place the prepared perilla leaves in a bowl. Add the ssamjang, minced garlic, fragrant perilla oil, and sesame seeds. Gently mix everything together with your hands until the dressing is evenly distributed. You can adjust the amount of ssamjang to your preference.
