For my mother’s birthday, my siblings and I decided to prepare the celebratory meal ourselves, and I took charge of making the abalone rice! This dish is not only light and healthy but also surprisingly easy to make with an electric rice cooker. Let’s make it together!

Rice Ingredients

  • 8 fresh abalone
  • 6 cups short-grain rice
  • 6 cups water
  • 4 Tbsp sesame oil

Soy Sauce Seasoning

  • 7 Tbsp soy sauce
  • 1/2 onion (finely chopped)
  • A little chives (chopped)
  • 1.5 Tbsp sesame oil
  • 1.5 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp water

Cooking Instructions

Step 1

First, rinse the rice and let it soak for about 30 minutes. While the rice is soaking, let’s clean the abalone. Use a brush or baking soda to scrub the abalone shells thoroughly, paying attention to the crevices. If you plan to use the shells, make sure to clean them of any debris as well.

To detach the abalone meat from the shell, gently insert a spoon or a specialized tool into the gap between the meat and the shell, and carefully twist to separate them. Be gentle to avoid damaging the abalone.

Carefully remove the abalone’s roe (the green or dark part) from the meat. This roe will add a rich flavor to the rice.

The abalone’s ‘beak’ or mouth is located on the underside of the meat. You can remove it by firmly pressing with your fingers or by carefully cutting it out with scissors or a knife.

For the abalone that will be placed on top of the rice, score the surface to create a decorative pattern. Thin, crosswise cuts will make it curl up beautifully like a flower when cooked, while deeper cuts will result in a more substantial texture. Feel free to adjust the scoring depth and pattern to your preference.

I’ve separated the abalone into two portions: one for topping the rice and the other to be mixed into the rice for added flavor. Slice the abalone intended for mixing into the rice into bite-sized pieces. The abalone for topping can be left whole.

Finely chop the removed abalone roe with a knife, or pulse it in a blender until smooth. Pureeing the roe will help it integrate better into the rice, lending a more profound savory taste.

Heat some sesame oil in a pan over medium heat and sauté the abalone roe. Cooking the roe thoroughly helps to reduce any fishy smell and enhances its nutty flavor. Once the roe is partially cooked, drain the soaked rice and add it to the pan. Stir-fry the rice until the roe coats the grains. Then, add the chopped abalone and stir-fry briefly.

Transfer the stir-fried rice and abalone mixture to the inner pot of your electric rice cooker. Add an equal amount of water as the rice (typically a 1:1 ratio). Now, press the ‘cook’ button to start cooking the delicious abalone rice.

When the rice cooker is nearing the end of the cooking cycle and has moved to the ‘keep warm’ or ‘rest’ phase, place the whole, scored abalone pieces on top of the rice. The steam will gently cook the abalone, making it tender and flavorful.

While the rice is cooking, let’s prepare the accompanying soy sauce seasoning. Finely chop the chives and onion. In a small bowl, combine the soy sauce, chopped onion, chopped chives, sesame oil, gochugaru, and water. Mix well until everything is evenly incorporated. This flavorful seasoning is now ready to be served alongside the abalone rice. You can add a touch of sugar or garlic if you prefer.
