Porridge Ingredients- 6 fresh abalones
- 9 abalone livers
- 1 serving of regular rice
- 1 serving of glutinous rice
- 1L (about 5 cups) of water
Cooking Instructions
Step 1
First, wash the regular rice and glutinous rice thoroughly. Rinse until the water runs clear, then drain them in a colander and let them soak for about 30 minutes. This will help the rice grains cook down to a wonderfully soft consistency, creating a delicious porridge. Drain the soaked rice well.
Step 2
Clean the fresh abalone livers and chop them into bite-sized pieces with scissors. (Alternatively, you can blend them in a mixer for a smoother texture.) Heat 1-2 tablespoons of perilla oil in a frying pan over medium-low heat. Add the chopped abalone livers and sauté, stirring frequently to prevent sticking. This step helps to remove any fishy smell and develops a rich, nutty flavor.
Step 3
To the same pan with the sautéed abalone liver, add the drained soaked rice. Stir-fry for about 1-2 minutes. As the rice grains become slightly translucent, it indicates they are ready to cook down smoothly, further enhancing the porridge’s flavor.

Pour the 1L (approximately 5 cups) of water over the stir-fried rice and abalone liver. While you can add all the water at once, a good tip is to start with 1L and gradually add more water as the porridge cooks, adjusting the consistency to your liking. Feel free to modify the water amount based on your preference.

Bring the mixture to a boil over high heat. Once it starts boiling, reduce the heat to medium-low and stir continuously with a spoon to prevent the rice from sticking to the bottom of the pot. Simmering gently allows the rice grains to break down and cook into a smooth, delicious porridge.
Step 6
When the rice grains have softened and the porridge has reached your desired consistency, add the sliced abalone. Abalone can become tough if overcooked, so it’s best to add it towards the end and simmer just until it’s cooked through. Once the abalone is tender, turn off the heat.
