Main Ingredients

  • 1 cup dried chickpeas (soaked overnight)
  • 1/4 head of lettuce
  • 1/2 red bell pepper
  • 1/2 orange bell pepper
  • 1/2 cucumber
  • 3 tablespoons honey
  • 3 tablespoons lemon juice
  • A pinch of Grana Padano cheese (optional)
  • 1/2 cup Greek yogurt
  • A pinch of salt (for boiling chickpeas)

Cooking Instructions

Step 1

First, prepare the chickpeas. If using dried chickpeas, soak them in water overnight. Once soaked, place them in boiling water with 1/6 tablespoon of salt and boil for about 20 minutes until tender. Drain the cooked chickpeas and let them cool slightly. (Tip: Adding a little salt while boiling the chickpeas enhances their flavor.)

Wash the lettuce thoroughly and cut it into bite-sized pieces. Pat dry with paper towels to prevent the salad from becoming watery and dilute the dressing.

Core and seed the red bell pepper, orange bell pepper, and cucumber. Dice them into approximately 1cm cubes. Cutting the vegetables into uniform sizes will improve the salad’s texture and presentation.

Prepare a refreshing and delicious yogurt dressing. In a bowl, combine 1/2 cup of Greek yogurt, 3 tablespoons of honey, and 3 tablespoons of lemon juice. Whisk gently with a whisk or fork until smooth. Adjust the amount of honey to your preference.

Arrange the chopped lettuce attractively on a serving plate. Top with the cooked chickpeas and the prepared diced bell peppers and cucumber. For an added touch of flavor, you can grate some Grana Padano cheese over the salad. Drizzle with the prepared yogurt dressing to complete this nutritious and delightful chickpea salad!
