Nourishing Sweet Pumpkin Porridge with Glutinous Rice Flour
A Hearty and Delicious Sweet Pumpkin Porridge Recipe
Enjoy a satisfying and wholesome meal with this easy-to-make sweet pumpkin porridge. It’s a comforting dish featuring the rich flavor of pumpkin and the chewy texture of glutinous rice flour.
Ingredients- 700g prepared winter squash (peeled and seeded)
- 6 Tbsp glutinous rice flour
- 120ml water (for mixing glutinous rice flour)
- 7 Tbsp brown sugar (adjust to taste)
- 1 tsp salt
- 700ml water (for boiling squash)
Cooking Instructions
Step 1
First, prepare the winter squash. Trim off the stem and bottom ends, then cut the squash in half. Scoop out the seeds and stringy pulp with a spoon. Peel the skin using a vegetable peeler or a knife; this will be easier if you cut the squash into manageable pieces first. (Tip: Microwaving the squash for about 5 minutes before peeling can make the skin much easier to remove.)
Step 2
Roughly chop the prepared squash into bite-sized pieces (about 2-3 cm) and place them in a pot. Pour in 700ml of water, cover with a lid, and simmer over medium heat until the squash is very tender. (Tip: Cutting the squash into thinner pieces will reduce the cooking time significantly, as very thick chunks can take a long time to soften.)
Step 3
Once the squash is thoroughly cooked and has cooled slightly, use an immersion blender to puree it until smooth. Aim for a creamy, lump-free pumpkin puree. If you don’t have an immersion blender, a regular blender or a potato masher can also be used effectively.
Step 4
In a separate bowl, combine 6 tablespoons of glutinous rice flour with 120ml of water. Stir well until there are no lumps and you have a smooth slurry. Ensure it’s well combined before adding.
Step 5
Add 7 tablespoons of brown sugar to the pot with the smooth pumpkin puree and mix thoroughly. You can adjust the amount of sugar based on the natural sweetness of the pumpkin and your personal preference.
Step 6
Gradually pour the glutinous rice flour slurry into the pot with the pumpkin and sugar mixture, stirring continuously. It’s best to add it little by little while stirring to achieve the desired consistency without creating lumps.
Step 7
Once all ingredients are combined and well mixed, reduce the heat to medium-low. Stir constantly with a spatula, making sure to scrape the bottom of the pot to prevent sticking. Continue cooking until the porridge thickens as the glutinous rice flour cooks.
Step 8
When the porridge has reached a thicker consistency, add 1 teaspoon of salt to season. The salt will enhance the sweetness of the sugar and balance the overall flavor profile.
Step 9
Check the consistency. If it’s too thin, simmer for a bit longer to reduce. If it’s too thick, add a little more water to reach your desired texture, then turn off the heat. Your delicious and smooth sweet pumpkin porridge is ready!
