How to Make Delicious Dried Radish Greens Rice Using Seasonal Siraegi (Perfect for Dieting!)
If you enjoy eating brown rice, you won’t want to miss out during the dried radish greens season! Siraegi-bap is a hearty yet low-calorie meal, making it ideal for a diet. It’s also highly effective in relieving constipation due to its rich fiber content. Let’s start making this healthy and tasty Siraegi-bap right away!
Rice Cooking Ingredients- 2 cups soaked rice (mixed with brown rice or multi-grain)
- 3 dried shiitake mushrooms
- 1 piece of dried kelp (approx. 5x5cm)
- 450g dried radish greens (boiled and prepared)
- 1 Tbsp soup soy sauce (for seasoning radish greens)
- 1 Tbsp perilla oil (for seasoning radish greens)
- A pinch of sesame seeds (for seasoning radish greens)
Perfectly Balanced Seasoning Sauce- 5 Tbsp regular soy sauce
- 1 Tbsp plum extract
- A little minced garlic (to taste)
- 1 Tbsp chopped green onions
- 1 Tbsp sesame oil
- 1/2 Tbsp red pepper flakes
- 1 Tbsp sesame seeds
- 5 Tbsp regular soy sauce

Cooking Instructions
Step 1
First, boil the dried radish greens until tender. Portioning them into serving sizes and freezing them in zip-lock bags makes them convenient for later use. Today, we’ll be using these greens to make delicious Siraegi-bap.
Step 2
Rinse the rice thoroughly and soak it for about 30 minutes. (Mixing in brown rice or multi-grains adds health benefits and texture.) Soak the dried shiitake mushrooms and kelp in lukewarm water. Don’t discard this soaking water; it will be used as cooking water for the rice. Squeeze the soaked shiitake mushrooms dry and slice them thinly.
Step 3
Finely chop the boiled radish greens into bite-sized pieces. Place them in a bowl and gently knead them with soup soy sauce, perilla oil, and sesame seeds to season. Prepare the thinly sliced shiitake mushrooms as well.
Step 4
In a cast-iron pot or a regular pot, place the soaked rice at the bottom.
Step 5
Next, arrange the seasoned radish greens and sliced shiitake mushrooms attractively on top of the rice.
Step 6
Pour the shiitake mushroom soaking water (or kelp soaking water), measured to be the same volume as the rice, as the cooking liquid. Adjust the amount of water as you normally would for cooking rice.
Step 7
Now, let’s cook the rice. Start by boiling over high heat for about 10 minutes until the water is slightly reduced. Then, reduce the heat to low and simmer for another 10 minutes. Turn off the heat and let it steam for 5-10 minutes for perfectly cooked Siraegi-bap. The slightly scorched rice at the bottom (nurungji) is an added bonus! Serve with the prepared seasoning sauce mixed in for an even more delightful flavor.
