Porridge Ingredients- Boiled dried radish greens 400g (finely chopped)
- Rice 240g (approx. 1.5 cups, washed and soaked for 30 minutes)
- Ground pork 400g
For Stir-frying Siraegi- Doenjang (Korean soybean paste) 2 Tbsp
- Sesame oil (perilla oil) 2 Tbsp
For Cooking Siraegi- Water 2L (or rice water)
- Korean soup soy sauce 1 Tbsp
- Fish sauce 1 Tbsp (for umami)
For Marinating Pork- Salt 1 tsp
- Black pepper, a pinch (as desired)
For Stir-frying Pork- Sesame oil (perilla oil) 1 Tbsp
- Soy sauce 0.5 Tbsp
- Doenjang (Korean soybean paste) 2 Tbsp

Cooking Instructions
Step 1
First, wash the rice thoroughly and let it soak in cold water for about 30 minutes. Don’t discard the soaking water; it can be used later as broth to enhance the porridge’s flavor. Drain the soaked rice. Finely chop the boiled dried radish greens into bite-sized pieces (about 1-2 cm). Prepare the ground pork – you can use store-bought or mince pork shoulder/loin yourself.
Step 2
In a deep pot or wok, heat 2 Tbsp of perilla oil over low heat. Add the finely chopped dried radish greens and stir-fry until all the moisture has evaporated. This step helps to reduce any bitterness from the greens and brings out their nutty aroma.
Step 3
Once the siraegi is well stir-fried, add 2 Tbsp of doenjang and continue to stir-fry with the greens for about 1 minute. This helps to toast the doenjang and deepen its savory flavor, coating the siraegi nicely.
Step 4
Pour 2L of water (or the reserved rice water) into the pot with the stir-fried siraegi. Add 1 Tbsp of Korean soup soy sauce and 1 Tbsp of fish sauce. Bring to a boil over high heat, then reduce to medium-low. Simmer for about 10 minutes until the siraegi is tender, creating a flavorful siraegi broth.
Step 5
While the siraegi broth is simmering, prepare the seasoned pork. In a separate bowl, combine the ground pork with 1 tsp of salt and a pinch of black pepper. Mix well. In another pan, heat 1 Tbsp of perilla oil over medium heat. Add the seasoned pork and stir-fry until it’s almost cooked through. Then, add 0.5 Tbsp of soy sauce and stir-fry briefly to add a savory glaze.
Step 6
When the siraegi broth is boiling, add the drained soaked rice. Stir well with a ladle to prevent the rice grains from clumping together. Continuous stirring is key to prevent the rice from sticking to the bottom of the pot. Cook for about 15-20 minutes, stirring frequently, until the rice grains are translucent and the porridge reaches your desired consistency.
Step 7
Once the porridge has reached the desired thickness, prepare the stir-fried pork topping. The consistency of the porridge can be adjusted by simmering time and how long the rice was soaked. When the rice is fully cooked and the porridge is smooth and creamy, remove it from the heat.
Step 8
Ladle the hot siraegi porridge into serving bowls. Generously top with the savory stir-fried pork. This dish is so complete and satisfying that it doesn’t require any side dishes, making it a perfect, wholesome meal.
