First, prepare 300g of good quality beef (such as brisket cut for soup). Heat 2 tablespoons of sesame oil in a pot over medium-high heat. Add the beef and stir-fry until it’s nicely browned and fragrant. Searing the beef well develops a deeper flavor.

Soak the dried seaweed in plenty of cold water for about 30 minutes until it’s fully rehydrated. Rinse the seaweed thoroughly several times under cold running water to remove any grit and excess salt. Squeeze out the excess water and cut it into bite-sized pieces. This step ensures a tender texture and cleans the seaweed.

Add the prepared seaweed to the pot with the stir-fried beef. Pour in 1 tablespoon of soy sauce for soup and stir-fry them together for a minute or two. This allows the seaweed and beef to absorb the savory flavor of the soy sauce, enhancing the overall taste of the soup.

Now, add enough water to generously cover all the ingredients in the pot. Bring it to a rolling boil over high heat. Starting with high heat helps to extract the flavors from the ingredients effectively.
