Porridge Ingredients- 2 servings white rice (soaked in cold water for 1 hour)
- 1 potato (finely diced)
- 1/2 carrot (finely diced)
- 1/2 zucchini (finely diced)
- 1/4 broccoli (finely diced)
- Pinch of black pepper
- Pinch of salt
- Drizzle of sesame oil
- Pinch of sesame seeds (for garnish)
Cooking Instructions
Step 1
First, prepare the rice. If you don’t have glutinous rice, regular white rice works perfectly! Rinse 2 servings of white rice and soak it in cold water for about 1 hour. This soaking process will make the rice grains tender and the porridge wonderfully creamy.
Step 2
Next, prepare the vegetables for the porridge. Wash and peel (if necessary) 1 potato, 1/2 carrot, 1/2 zucchini, and 1/4 broccoli. Dice them into very small pieces, similar in size to the rice grains. This small dice ensures they cook evenly and blend well into the porridge.
Step 3
Now, let’s utilize the leftover Samgyetang broth. Gently cool the broth in a pot and skim off any excess oil that has risen to the surface. Removing the oil will result in a cleaner and more delicate flavor for your porridge.
Step 4
Drain the rice that has been soaking for 1 hour thoroughly using a sieve. Discard the soaking water.
Step 5
Pour the skimmed Samgyetang broth back into the pot and add the drained white rice. Now, we are ready to start cooking the porridge.
Step 6
Add the finely diced potato (1 piece) to the pot. Potatoes will soften as they cook, helping to thicken the porridge to a desirable consistency.
Step 7
Next, add the diced carrot (1/2 piece). Carrots will bring a lovely color and a subtle sweetness to the porridge.
Step 8
Add the diced zucchini (1/2 piece) as well. Zucchini becomes very tender when cooked, blending seamlessly into the porridge.
Step 9
Finally, add the finely chopped broccoli (1/4 piece). Broccoli adds nutrients and a pleasant texture. Bring the mixture to a boil over high heat, then reduce to medium-low heat and let it simmer gently.
Step 10
Once the porridge starts to simmer, add a pinch of black pepper to enhance the aroma. Be careful not to add too much.
Step 11
Season the porridge gradually with a pinch of salt. Taste and adjust the saltiness as needed. Continue to cook, adjusting the heat, until the porridge reaches your desired consistency.
Step 12
When the porridge has thickened to your liking and the rice grains have broken down, it’s nearly ready. If it seems too thick, you can add a little more Samgyetang broth or water to achieve the perfect consistency.
Step 13
Just before you turn off the heat, add a drizzle of sesame oil. The nutty fragrance of sesame oil will elevate the overall flavor of the porridge.
Step 14
Finally, ladle the porridge into a bowl and garnish with a sprinkle of sesame seeds. Your delicious and nourishing Abalone Samgyetang Porridge is now complete! Enjoy this warm and healthy meal.
