Making Delicious Egg Vegetable Toast at Home, Nostalgic Street Toast
Try making a satisfying street toast using leftover vegetables, ham, and cheese from your fridge. What started as a way to use up ingredients has now become a ‘life toast’ recipe that I buy ingredients for specifically because it’s so delicious. It’s simple yet offers a rich flavor that the whole family can enjoy.
Ingredients- 4 slices of bread
- 3 eggs
- 1.5 cups finely shredded cabbage (about 1 large handful)
- 1/4 carrot, thinly julienned
- A little chopped green onion or scallion
- 1 pinch of salt
- 2 slices of processed cheese
- A little sliced ham or Spam (thinly sliced)
- Ketchup, to taste
Cooking Instructions
Step 1
Toast the 4 slices of bread until golden brown and crisp. If you don’t have a toaster, you can toast them in a dry pan without oil until crispy on both sides, or lightly butter them for extra flavor, according to your preference. Let the toasted bread cool slightly.
Step 2
Prepare about 1.5 cups of finely shredded cabbage, julienned carrots, and chopped green onions. You can adjust the amount of vegetables to your liking; using a variety of colors will make the toast more visually appealing.
Step 3
Crack the 3 eggs into a bowl. Add the prepared vegetables and a pinch of salt, and gently mix them together. Even if it doesn’t seem to mix well at first, gently stir with chopsticks or a whisk until everything is combined smoothly. It’s important to mix the egg mixture until it’s smooth.
Step 4
Heat a pan over low heat and drizzle a thin, spiral layer of cooking oil. Pour the entire egg and vegetable mixture into the pan. Cook slowly over low heat. Cooking over low heat, rather than high heat, prevents burning and ensures the mixture cooks evenly all the way through.
Step 5
Once the bottom of the egg mixture starts to turn golden brown, gently lift the edge with a spatula. After checking that it’s cooked, use the spatula like a knife to cut the egg pancake into 4 equal portions. Adding a little oil to the cut edges will help them crisp up nicely.
Step 6
Carefully flip the 4 portions of the egg pancake and cook until golden brown on both sides. While it’s ideal to flip them all at once without hesitation, it’s okay to flip them in 2-3 steps if it’s difficult. Pre-cutting them into portions makes it easier to manage the amount for each toast later and prevents them from tearing and sticking together.
Step 7
Prepare thinly sliced ham. If using salty Spam, use about 2 thin slices. If using less salty ham, use enough to cover one side of the bread. Tip: It’s better to cook the egg pancake first before cooking the ham. The fat and juices from the ham can easily discolor the pan, making it less ideal for cooking the egg mixture immediately afterward. Wiping the pan after cooking the ham will keep it clean for the next step.

Now, let’s assemble the delicious toast!

On one side of the toasted bread, place a slice of processed cheese, then top it with the prepared ham slices. The ham I used was not very salty (I used Homeplus Signature Vegetable Ham).
Step 10
Carefully place one of the 4-portioned egg pancakes on top of the ham.

Layer the other egg pancake on top, creating a generous, two-tiered filling.
Step 12
Finally, drizzle ketchup in a zig-zag pattern over the toast. You can also add a sprinkle of sugar for sweetness, if you like. Feel free to add other toppings according to your preference!
